In this video we’re making a traditional salsa verde and a salsa roja. Both of these are estilo Monterrey, MX and courtesy of my good friend Ruben “El Borrego” Rios who made these for us during one of our epic bbq classes. Gracias Compadre!
For our salsa verde we’re gonna use seven tomatillos, three green jalapenos, two cloves of garlic, a head of cilantro and 2 tsp APC OG - which is salt pepper and garlic. This is a boiled salsa that is rich in flavor and can be a great base for other recipes like enchiladas suizas or just for topping tacos and your favorite plates.
Now the salsa roja is a little bit different but just as amazing. This recipe calls for seven red jalapeños, five roma tomatoes, two garlic cloves, seven chile de arbol, 2 tsp of APC OG and while blending…2 tablespoons of olive oil. This gives the salsa roja a creamy, smooth texture that is delicious with chips, some loaded ribs or any grilled meats.

Salsa verde was something that took me too long to figure out. Some years back I was hungry and saw a small taco place and decided to try it out. Man, some excellent tacos and the "green sauce" was addicting. They didn't speak much English and I didn't speak much Spanish and they called it "green sauce" and it took me months to finally figure out what exactly it was and what was in it. I can never have a taco without it again lol. People don't know what they're missing.

I've been making 50/50 flour and corn tortillas They are soft and tough like wheat tortillas, but flavoursome and nutritious like corn Basically, for corn tortillas, 4 parts masa harina 3 parts water Salt Mix until like play dough Rest Press Fry I also did 5/5/1 part flour with 5 parts corn, 5 parts wheat and 1 part lentil flour The lentil flour is used in chapatti bread, and gives the tortilla a really nice colour to the fried tortillas

on the jalapenos to know if hot or not, you look for lines in the jalapenos which means its hot. the dark green are pretty mild

on my last trip to mexico I went to a local taqueria that served this style of red salsa and it was the best salsa that I had on the trip! I am going to try this today.

Arnie, I made the Salsa Verde today. For the peppers I used, one Jalapeno and three Serranos. Very delicious and the right amount of heat for me. This is the fourth of your salsa recipes that I have made and all have been amazing! 😺

Get fired up! In my early 30s and as of recently past year or so have taken an interest in culinary. I Think mastering my salsas would be a good move early on. I hear a good salsa comes in time. Mastering the recipe by eye and from the heart.Thanks for the inspiration Arnie! Gonna give these a go. They look delicious. Especially the Roja. Beautiful color.

Made the salsa verde today with what I have here in the northern Basque Country. Green piment d’Espelette for the jalapenos and green tomatoes for the tomatillos. Came out super good! Pretty spicy! Will try the red once the piment d’Espelette turn red.

Love these salsa videos! As a Texan who loves to BBQ and cook, salsa is literally a way of life. I always complicated it, but you showed me the light. Simple is key, the most simple salsa is always best and gets that restaurant quality flavor. 👍

I will definitely try these!! A suggestion for another recipe... My local Mexican restaurant is very authentic. They make a dark reddish brown spicy sauce that has a good amount of heat. I do not know the name of the sauce, but it's good!!

I tried one of your other salsas. The Chipotle made it so much better. I personally don't care for the flavor of boiled jalapenos. Next time I'm trying them fresh. Love your recipes. The Pinto beans and refried beans recipe is awesome.

I don't like boiled jalapeño either. What I've been doing lately is throwing them in, along with the tomatillos, into my air fryer. About 10-12 minutes on max heat. Gets that nice charred flavor.

Just made this. But added one Serano and one Anahiem. Didnt have OG, but used Lawry's Casero Total Seasoning Sazón a Más. So damn good!

Have you ever added about half a lime to your salsa verde? I used to when I made it a lot, when I lived in another town about 11 years ago. I would make it the same way you did and add a luittle lime juice to it, everyone loved it, I used to be called "The Salsa Man" in that town.

I recently learned that the Arbol chiles do not mess around...added 3 to a batch of hot sauce (3 cups when finished blending) it was hot! BOOM

Looks great! Sauce turns orangeish because air is being incorporated at a high speed known as a suspension. The air bubbles spread out the red pigments.

Love your recipes Arnie! I have a question; We had a mexican restaurant nearby that served Mexican rice with vegetables in it, like peas, small bits of carrot, potato, occasionally a lima bean or green bean, and some diced onion. Do you have a recipe similar to that? Thanks in advance!

I prefer that really smooth verde salsa at the border restaurants in the squeeze containers even smoother than this. Do you just blend it smoother or it some added cream etc? I've been told it's just jalpenos and cream or added sour cream or the tomatillos. So the olive oil provides the smoothness!

With roasted you get a Smokey flavor to your salsa. With the boiled it’s more about the veggie flavors and more mild in the flavor compared to Smokey. Hope this helps 😊

You can sub the green ones if you don't mind the color being different. Red ones are just green ones that have ripened further.

I like the olive oil cause it's flavor is better to me it gives it more depth but most if not all restaurants just use vegetable oil cause it's cheaper and usually has no flavor but we want flavor!
