This amount of dedication to quality is absolutely insane. I wouldn't last two days doing this, as my mind and body would shut down from all the work needed. Next time I'm in Japan, I hope I can taste this.

This guy is a machine....... from every prepped ingredient to every dish perfection. You can not move like he moves in the kitchen without an overwhelming passion for food. This guy absolutely loves every day and you can see it expressed in his hard work and attention to every single dish. I wouldn't be shocked if he wasn't on the Michelin radar.

The flakes for the broth - seen in so many other videos - are certainly a turn-off and from a culinary perspective nobody cares - sadly - about him being doing it alone with passion. Oh, around 7m45, refreshed fried tofu , seriously ! Come back later if at all for a Michelin consideration.

Other restaurants separate duties to multiple cooks: one who prepares the udon, one who is the deep fryer, and one who cooks the other rice dishes. This guy does it all by himself with skill and precision. He is the true pro's pro.👨🍳🥇

Efficient techniques all the way. Especially enjoyed the prep of the green onions and the tempura technique at the fryer. Adding more coating while the food cooks. You are a master at your trade. Thank you for the most excellent video. I learned many things 🙏
