Can I use spaghetti noodles instead udon, it's hard to find udon here, and Iam a senior but would like Japanese foods which I like to cook for my grand kids
I like to watch anyone making their noodles. I make a one meal at a time by hand, but appreciate seeing the work put into a large supply. And your kitchen is so hygienic.

Look how clean and organized his place is. A credit to the industry imo.
Wow, he's some worker, bless his heart. You can tell he loves his work. And, that's a lot of work.

I love how they move fluidly around the kitchen. The food made me hungry 🤤. Also the waitress with the short hair, glasses and grey apron was really cute 🥰

The taste of handmade noodles is really different from ones made by machine Handmade noodle has much greater chewiness and good taste when eating Great effort for making premium dishes This is awesome and really want to try the food

Besides hand/foot kneaded dough, also appreciate the broth is made of real fish, mackerels, herring and etc. When I visit Kobe-ish, I will just eat his noodles as often as I can.
