There is general pushback here against insidious American culture influences like tipping (which from my regular visits to the UK seems to be creeping into some places). It’s a fundamentally different wage structure in the service industry here compared to the USA, and the standard of service at a sit down restaurant is always expected to be reasonable without the need or expectation of a tip. A young staff member at a local restaurant once asked me at the counter when I was paying the bill whether I wanted to leave a tip and I looked straight at him and said “the service was fine but that’s pretty ballsy asking a local for a tip don’t you think mate?” He apologised and bypassed the tip screen on the card reader. Most places I’ve been bypass that screen immediately if it pops up.

Multiple reasons combined to lead to the use of individual packets of sugar, sauce, mayonnaise, etc. Hygiene was a big one. A while back there was quite an issue with contamination of food from condiments that had been contaminated through careless usage. Another reason was waste. Pumping from a bottle, people would use far more sauce than needed, costing the restaurant more. A third was practicality. It was far harder to judge how much was left in a bottle, compared to counting packets, to know what to order to replenish. Where before the cost of condiments was just absorbed into the price of the food, small packets cost more, so many places then decided that a fairer system was user pays. That suits me as I don’t have condiments on anything but sausage rolls, and I’m happy to pay for that, rather than subsidise some small child who accidentally squeezes out half a bottle of sauce. It also means the pastry of my take-away sausage roll doesn’t get soggy, because I add the sauce when I’m ready to eat. And as a bonus, this led to the genius Aussie solution of the sauce container that opens and squirts from the middle, so handy for picnics.

lived here (Aus) for 16 years and would make a couple of observations... 1. there are loads of fish and chip shops that are just like UK 2. tipping is not required because we pay a fair wage for the work done (including taxes and contributions) 3. all condiments are available at the stores I use.

In Australia people working in the hospitality industry are paid a proper wage by their employer and the rate will go up for casuals, on weekends, public holidays and night shift. It costs people enough now to go out for a meal adding a tip is the last thing that we need keep those practices in the US or the UK. We have a lot of differences in Australia compared to the UK because we have moved on especially since WW2 we are now more influencd by the many cultures that have been introduced through different waves of immigration.

West Aussie here - WOW, I've never heard of anyone here being questioned or challenged about having a kids meal. I have a family friend, who only ever orders a kids meal, because she's had stomach surgery. We don't pay for vinegar at fish n chip shops here either. The main reasons you pay for sauces here, is No1 it costs a lot of money to truck them over from the east. No2 the rubbish factor, so they prefer you use your own sauces from a bottle at home. Australia has been trying it's hardest to cut as much rubbish/plastics from our hard rubbish as possible. The less we have plastics in our environment, the better off we all are.

Growing up in the 60's and into the 70's it was common to order chips with vinegar. For some reason it sort of died out more or less through the 80's. Probably the American culture influences were getting stronger in the 80's and our British centric culture less so. Plus, the multicultural nature of Australia had grown lots and provided us greater options we tended to like more.

You can get vinegar at all chippies. Ask for it. The standard is white vinegar. You would have seen it not realised. Also at Samson's in Raby Bay harbour they definitely have a bottle of malt vinegar. I always hunt it down at that fish bar as I live in Thornlands have done since 2008. We mostly go to Chumleys for fish and chips. Mainly because they sell pints of beer. There is also a British Yorkshire chippy van in the area. The last time was at Bacchus Brewery in capalaba a few weeks ago. Had a few British beers and fish and chips there. Try London spuds. They are a taste sensation. Also for a British balti Birmingham recipe go to Haveli Indian restaurant Victoria Point. I am originally from the black country love chicken balti and Haveli have it exactly same as back in Brum for taste. They don't serve it in a balti dish thou. But for taste it is spot on. When I asked they told me where they got the recipe and it is from the UK. So not the Indian version.

Vinegar doesn’t seem to be as popular on fish and chips as it used to. I think people tend to have lemon more for the acidic kick these days. I’m pretty sure that you’d be able to get vinegar if you ask for it though.

You pay extra on weekends and public holidays because workers get paid extra. Never in all my 77 years have I ever seen a kids meal refused even to adults. My local fish and chip shop asks do you want vinegar and put it on for me for free. Most fish and chip shops do NOT have anywhere to sit and eat they are take away only.

Many fish n chip places actually do have malt vinegar and will supply it on your fish n chips if you ask for it,. It was a very popular addition when I was a bit younger, maybe not so much now, but you should give it a go and ask for it next time. Great video.

It depends where you live, we are a large country not just the south. There are plenty of fish&chip shops like the UK. No tipping, we have the highest min wage. Some include condiments, some don't. Again I would suggest seeing more of the country. Never been to a place that won't serve kids from the kids menu. Unless you have teenagers. Rarely do people use vinegar here, unless they are from the UK like my dad. One the fish tends to be fresh and nicely battered or crumbed and vinegar would make that soggy. Two, if you have chicken salt on your chips, vinegar would ruin it. Just put some lemon on your fish and make sure you get chicken salt. And if the fish isn't fresh with crunchy coating and the chips limp and soggy -go elsewhere! We have excellent 'chippies' so don't go back to a poor one. P.S if you really must use vinegar :) buy yourself a bottle, Coles and Woolies have a good selection.

Oh don't get me started on kids meals !! I had the opposite problem with my daughter ( she is now 18) but as a child she always wanted adult food , but of course as a 6 or 7 year old she couldn't eat the full adult size. I often asked for a half size portion of things like pasta or roast of the day or curry and rice and they often thought I was insane for even asking. From a very young age she refused anything fried , so typical kids meals like fries , fish and chips , nuggets etc just wouldn't work. Ah kids 😂

Lived in the UK for a number of years. Never had any decent fish and chips. Really terrible. And the habit of sloshing vinegar on it all was frankly disgusting. But I do miss pork pies. Can't understand why they're not widely available in OZ.
