Cooked this last night (using half coffee and half beef stock). Fantastic. Only change I will make for next time is to not add the salt as the Marmite and stock are salty enough

I wouldn't make this recipe if I felt like making some chili, but you know what? I AM going to make it, because I'm extremely curious to find out how it tastes. I also think you lest because of the coffe. For more subtle flavor try to replace it with Roiboss tea (RedBusch), it adds nice fruitiness and kind of honey aroma.

Rhys Sadler-Price Coffee doesn't do well slow cooked. Ever leave a pot of coffee hot for like 3 hours, go back later thinking it's still good and make a cup? It gets that burnt flavor to it. Maybe cook the meat in some stock and it's own juices, and reduce some coffee in it at the end.

It looks really good. A nice glob of sour cream on that would be pretty awesome. I think I'd be with that last guy though. That much strong coffee that is then reduced further would be way to strong for my personal taste. I would have mixed it in with some beef stock so that you get the depth of flavor from the coffee without it being a smack in the mouth. Also, adding some unsweetened cocoa powder can add a different, additional bitterness, while also contributing to the sweet and spiciness (I swear it doesn't taste like chocolate candy). I'm sure the recipe is amazing as-is. The first two people loved it. Those are just some personal tweaks that I would implement to adjust for a little bit different of a flavor.

Bence Illés It provably could, but it would be a very different taste. Coffee mostly adds a bitter flavor, while wine gives an acidic and slightly sweet flavor

Hehehe... The Ancho is held up and called a Guajillo, then the Guajillo is held up and called an Ancho. I'm trying a variation of the recipe out tonight. Less coffee, and cooling the cheeks. Cube them up and fold them through my normal chilli recipe.
