Cooked this last night (using half coffee and half beef stock). Fantastic. Only change I will make for next time is to not add the salt as the Marmite and stock are salty enough

Honestly, ash is a really under appreciated flavour. No one questions it when it comes from the BBQ, but from other sources people seem to really dislike it.

You need to bring yourself up North mate. That looked amazing. I have a question; is it right or wrong to do your spice mix before or after searing? I always thought that once the meat was sealed it couldn't take spices on board. Increase the peace.

absolutely nailed it. Great dirty food that we can have a go at, at home. Good work. Gotta do a turkey curry next. But I would love to see you do something my mate is trying to figure out. A jerked ultimate burger, Every summer on his barbie we try it out. Not mastered it yet. Mr busker, show him the way

I wouldn't make this recipe if I felt like making some chili, but you know what? I AM going to make it, because I'm extremely curious to find out how it tastes. Some interesting things going on here, with the rub and braising in the hot chili coffee. Pretty easy recipe too, so why not? Thanks Food Busker!

I also think you lest because of the coffe. For more subtle flavor try to replace it with Roiboss tea (RedBusch), it adds nice fruitiness and kind of honey aroma.

Too much coffee in my opinion. That'd be what made that dude think it tasted burnt. Maybe go two parts beef stock to one part coffee?

yeah, i'd probably say the same as him b/c i don't like coffee, but not knowing there is coffee in there could make me think it's burnt instead of just thinking there is a flavor i don't like

I'd take the pan that he fried the cheeks in and make a roux... then I'd add the coffee... then add the chilies to that bad boy oh yeaaaa

Rhys Sadler-Price Coffee doesn't do well slow cooked. Ever leave a pot of coffee hot for like 3 hours, go back later thinking it's still good and make a cup? It gets that burnt flavor to it. Maybe cook the meat in some stock and it's own juices, and reduce some coffee in it at the end.

I think so too. A hint of coffee is good tho. The bitterness is great. As alternative i use at least 80% dark chocolate

It looks really good. A nice glob of sour cream on that would be pretty awesome. I think I'd be with that last guy though. That much strong coffee that is then reduced further would be way to strong for my personal taste. I would have mixed it in with some beef stock so that you get the depth of flavor from the coffee without it being a smack in the mouth. Also, adding some unsweetened cocoa powder can add a different, additional bitterness, while also contributing to the sweet and spiciness (I swear it doesn't taste like chocolate candy). I'm sure the recipe is amazing as-is. The first two people loved it. Those are just some personal tweaks that I would implement to adjust for a little bit different of a flavor.

Bence Illés It provably could, but it would be a very different taste. Coffee mostly adds a bitter flavor, while wine gives an acidic and slightly sweet flavor

That was my concern too. Maybe a strong beer. I usually marinade my meat in wine but cooking it in, different story.

Knowing the quality of the ingredients and the time involved i would have thought this would pull £7.50. Was just wondering how far down the road the smell of that cooking would pull punters in. Not a fan of Marmite, but you got me wondering what it's like for cooking. Thank You John.

To be honest never seen a chili made with coffee but it looks delicious! When that meat was introduced into the marinade I thought it looks as good as it gets! I think for that portion 5 pounds is spot on! Boom!

That is a quality dish, well done. Unlucky selection of punters really. But some fantastic ideas out of it...coffee/red wine/balsamic-beef stock (etc, etc, etc...) to re-hydrate the peppers and low and slow the beef...

A very strong salty yeast extract...it's hard to describe. Maybe soy sauce and worcestershire? I dunno I hate that shit and I haven't had it in 20 years :D

Hehehe... The Ancho is held up and called a Guajillo, then the Guajillo is held up and called an Ancho. I'm trying a variation of the recipe out tonight. Less coffee, and cooling the cheeks. Cube them up and fold them through my normal chilli recipe.

Definitely pay 5 pnds for it. Looks awesome. You are asking cheapskates, that's your problem. You can already see they wouldn't pay more for it. Especially that last one. Cheapskate just chasing free shit. You should ask someone if they like that type of food first, and if they'd actually buy it... THEN let them taste it. THEN you will get the most honest opinions from actual, potential customers. Also, you will be able to see if there's actually any interest for the food.
