We’ve been wanting to do another Filipino food episode for all of you and we finally got the chance to do so with Max’s Restaurant. We heard the fried chicken here is out of this world and is to die for. We drove into Glendale to see what the hype is all about and boy does it live up to its reputation! Besides their fried chicken, we ordered up some traditional Filipino food and including Sisig and Halo Halo. Check out the video to see everything we ordered, what we thought about this place and their Filipino offering!

Karekare is my fave Filipino dish, but I'm allergic to shrimp paste. My salty side would always be fish sauce, and it still comes out as good. You had a tamer version of the dish with Max. My mom's karekare would include oxtail, beef tripe and cheeks. As for the sisig, I felt you were cheated by Max for they used pork belly. Authentic sisig is made from grilled pig's ears and face that are chopped into tiny morsels with onions and chili. Max is a known brand and I'm glad they represented the Philippines well. Glad you enjoyed our food.

Nice catch on the starch in kare-kare! In traditional recipes, we use ground up glutinous rice (or sticky rice flour) to thicken the sauce. You also noticed the rice crisps in the halu-halo. Those are called pinipig and, yes, they're young toasted rice. Apart from the texture contrast, they have a nice aroma and an almost nutty flavor. I personally like to pick them off first because they get overpowered by the slush if you mix them up.

You eat kare kare with shrimp paste called bagoong...

@@EpicureanEric ask for shrimp paste. Put a little in every spoonful of kare kare. Dont put too much as it is very salty. The umami flavor of the bagoong/ shrimp paste will work well with the creamy peanut sauce of the kare kare

@@EpicureanEric Try the Crispy Pata at Max's. Also, try to find Filipino Restaurants selling Lechon and Lechon Kawali. Both are pork dishes. The former is roasted the latter is deep fried. Hope you enjoy these.

This is a common misconception, but halu-halo actually means "mixed or assorted" referring to the variety of ingredients that come with the shaved ice. That's what makes it different from the single ingredient "con hielos" (shaved ice desserts) that have one main ingredient like saba (bananas) con hielo or mais (sweet corn) con hielo. Filipinos usually mix it all up, but there's really no hard-and-fast rule on how to eat them. Personally, I pick off most of the flan, ube, and ice cream then just mix the rest up. It all depends on the eater. 🙂

@@remrickpatagan oh really and what do you think was the original intent of the food inventor? Do you think it was the intention that we eat the ingredients one by one after all are dumped in one bowl?
