That's looks amazing. I typically mix salsa in with the eggs before they hit the grill. It add some heat, color, and flavor from the onion and tomato.

Hello Mr. A B. Where I live at, Texas Toast is a little hard to find. When I worked in a kitchen from 1980 to 1996...we made it just for French Toast Sandwiches etc. Just like way you make it. Haven't had French Toast since 1995. Thank you for taking me back to those days.

Looks delicious. I would only do one thing differently. I like my scrambled eggs really soft, so I would turn the burners off before adding the eggs. That would give me more control in slowing down their cooking. Eating that sandwich would be all that I needed all day!
