Hi, I really enjoyed watching this video! However, I think you might have missed out on some of the best places to eat in Georgia. As a Georgian myself, here are my recommendations: For khinkali: Dapna, Klike, and Zodiako. These places not only serve delicious khinkali but also offer a variety of other dishes at reasonable prices. For everything else: Shavi Lomi, Onore, Leila, Ninia's Bagi, Sesilia, and Puri Guliani (especially for Adjarian khachapuri). I hope you get the chance to try out these spots! They truly showcase the amazing flavors of Georgian cuisine. Thank me later :)

Dumplings are filled with meat when they are being made, but as soon as the dumpling starts to cook, the meat shrinks down, hence the empty space inside.

It is also because the filling produces so much steam when khinkalis are boiled, they are floating like balloons in a pan, and then shrink when on a plate.

Georgian cuisine has been accompanied by wine since ancient times and is perfectly suited to it. This radically distinguishes it from Indo-Muslim cuisines.

Khinkali is boiled not steamed, when u boil it meat will shrink, the whole point of it is to shrink in size and fill the space with juice. But normally home made traditional ones don’t look like that, and have more filling. Try it in Dapna or Amo Rame or Shemomechama for authentic Khinkali. I personally hate “restaurant style Khinkali” 😂 ps. In Dapna they have it with cheese and potato mix I am sure you will love it.

As for the Churchkela all the colorful ones are for tourists, we don’t eat ones made out of fruit juice. The only traditional ones are dark or light brown or dark red made out of grape juice ( Pelamushi)

I'm Georgian and you're right it seems that it's(Elarji) easy to make, it's not too complicated because you use 3 ingredients but actually it's not so easy. First of all as you said good ingredienst is must, also not just good but you need right ingredients (Chees in this case) because if it's not exactly it will not stretch. As in any cuisine siple dishes are usually hard to make because if you mess up 1 thing it's 30% of it and you can't fix it.

You can visit small restaurants Chokhi on Petriashvili Street and taste Khinkali served in non traditional way. Also restaurant Bia on Rustaveli. There you can taste real good lobiani and lobio in clay. I see you like khachapuri. Visit Sakhachapure N1 or Puri Guliani (more high end) serves nice adjaruli. For Khinkali try asi khinkali or klike or zodiaqo.

Hi there, Georgian here, thanks for sharing your experience being in Georgia. Some tips, I noticed you had corn bread with Pkhali, those do not really go with each other, eat Pkhali just like it is, with corn bread, if it is hot, you can split in a half and put a thin slice of cheese, YuM, or get Chvishtari, which is basically the same thing added shredded cheese before it's baked. I personally prefer that. you guys are doing great job eating Khinkali (in case khinkali gets little cold ask restaurant to warm it up, fry them -- totally different experience and delicious) Khachapuri - is with cheese Lobiani - is with beans Kubdari - is with meat (my favorite after khachapuri) when it comes to Mtsvadi -pork BBQ, you could try it with Tkemali - green sauce, much better with it ;) good luck!

i must say, not every corner can provide best food, in previous video and in this one you have been in not quite good restaurants and food taste can be better in better restaurant, you can ask locals where to find best khachapuri, khinkali and so on. its like street food where you have been and that can be reason for that 9:30

*26:55* The red stuff is actually ''badagi,'' basically thickened grape juice. Out of the Churckhelas (Which are honestly probably my favourite dessert in the world), the brown and uniform-shaped ones are probably the best, that grape juice flavour is best felt on those and it goes perfectly with the walnuts.

Try Ghomi, satsivi, mushrooms on hot pen in sulguni cheese, also a mushroom called "Nikhvi" fried in butter, qababi, cottage cheese khinkali is nice too. also East is the land of meat, west is the cheese part. for example if you want best khinkali and barbeque you visit Kakheti and if you loved khachapuri you go to adjara. Also best and original Churchkhela is made from grapes and wallnuts.

I love it when people of other nationalities eat Khinkali the right way, gj and thank you :D and there are several types of khinkali and it does matter how the chef cooks it :) and the space between the dough and the meat is for the juice. also, cheese khinkali is my favorite :) The Adjarian Khachapuri is my favorite food, the thing is, you eat from the outside to the inside, you rip some bread and dip it inside the cheese The Georgian language has nothing in common with the Russian language, we have had written language long before Russia was "created" so no. The Georgian language has the influence of Arabic countries, they conquered us many many times, also Greek maybe. Glad you liked Georgia, our culture, and most importantly, the food :D I'd also add that the quality and taste of street food as well as restaurant food may vary, depending on where you eat.

9:30 kinda true about the space between the dumpling and the meat but it is good in my opinion, sure the meat could be juicier without the space between them and there would be no need for the extra soup but i think the meat and the dumpling itself balance is good, some people like making the dumpling thin so the balance would be ruined, also it makes eating khinkali more fun

Georgian Wines - are the best and unique. Nobody in the World produces wine upon to the oldest wine making method! 8000 years of wine making history! But Georgians go far away...They now produce even whiskey in thier Qvevris!!!!

one thing i would add is that. Georgian barbeque is called Mtsvadi and it's normally marinaded in : Georgian red wine, onion, garlic, pepper. and after it's cooked right on the hot coal.. also it was very smart to guess that Adjarian Khatchapuri looks like a boat. since adjara is a port part of a Georgia and legend says that they were made especially to look like boats. hehe! . i hope to see you come back soon, maybe Batumi next? .. also you should try Georgian Shawarma. good luck!

some food is just international. We eat chicken with heavy cream and parsley in Romania as well (pro tip -goes even better if you pair it with mamaliga). Same goes for that corn with cheese and garlic(we tend to add smoked meat to it, or some bacon). Might be thousands of kilometers away, but if it's good, I don't see why not, we all love to eat

There are so many versions of bread with cheese in Georgia you cannot imagine. As for mamaliga, we have something similar gomiade of corn now but centuries ago we used to cook it from gomi that is polenta in Georgian. So traditionally we had gomi I. E. Mamaliga even before america was discovered and corn was brought to this part of the world. Just for information. In my family we like both corn mamaliga and the polenta mamaliga. It goes with spicy, hot food like, stewed meat or chicken with a lot of spice and pepper. And cheese of course.

For the street lobiani (the beans with dough you liked) and khachapuri, they don’t cut in the streets. If it’s big, then you fold it in half and bite into it like hotdog. Since it’s fast food you are supposed to eat it quickly in the streets when you are hungry and don’t have much time ❤

that baking well looking thing is called TONE, thats the ancient traditional baking furnace vertical one :D, outside of it is concrete but inside is a clay barrel and thats the best for baking bread, and that bread is called SHOTI easy to eat and u cant stop eating it, best thing to eat with it is home made cheese thats salty i would advice GUDA CHEESE which is flavory and smelly but maan the combinations are crazy and on top of that eat tomato without slicing it just whole tomato, u gonna fly into heaven from the flavor of this combination lol

so every corner or region (call as u wish) of georgia has their own variations of Khinkali, different flavors, so khinkali is the king of Georgian food, when u have king u need one last thing to make it perfect which is queen, so there comes the khachapuri which is the queen, every region tried in ancient times to beat eachother in variations of the food, they perfected their kitchens so whenever somebody came to us we would meet them friendly and offer food, shelter, bath, fresh clothes and warm heater, for free... if you visit the upper regions of Georgia you can still see the hospitality of Georgian nation, thats why i offer you to come in summer and ill show you much much more in Georgia which gonna drive you crazy, we got moisty wet always rainy jungles and rainforests, we have always frozen and snowy mountains, we have always hot and sandy deserts, seasides which are always full of people, we have dense thick green forests which you saw in movies lol, we got canions, cliffs, everything here even bamboo forests :D banana forests lots of things here to explore in 1-2 weeks i would say

Churchkhela is the name of the “candy” you eat. This street churchkhela is not a real one though, it’s unfortunately just for tourist attraction. You should try the one at special churchkhela shop called “Badagi”.

Unfortunately, it is nearly impossible to find a place where you'll eat really good khinkhali (and other traditional Georgian food) , even locals struggle with that. Traditional, homemade khinkhali is much different in terms of taste, texture and amount of juice. Dough should also be thinner and head much smaller. Side note: there needs be space left in khinkhali for more juice 😀
