I used to use a similar recipe to this, but it never properly tasted cheesy. The nooch goes a little way to give you that flavour, but I realised that it was missing that hit of glutamic acid which naturally occurs in the cheese. I started adding a splash of tamari to the sauce (it has glutamic acid), and amazingly... that actually worked with the nooch to make it properly cheesy! It even changed the texture. Give it a wee try if you're going with just pasta and sauce. :) As for me, I'm going to try adding the roast garlic and the mushrooms. Looks soooo good!

@@thehappypear I thought it might, especially since they have the tamari added. Mushrooms add to the umami. The roast garlic and caramelised onion look like great additions. I think I will give this version a whirl when I get home! It was such a quest to get the perfect cheese sauce! That pesky hit of glutamic acid is hard to replace. 😂

Lauren from Hot For Food adds a TBSP of tomato paste in her nacho cheese sauce. That seems to really help, in my opinion. Might want to consider that, too, in your experimentation.

That's a good shout. Tomatoes are also full of glutamic acid. I used Lauren's sauce from her leek gratin recipe as my launchpad for the cheese experiments. I'd tried sooo many others but found most too sweet.

Another good variation is: 1 & ¾ cup soy milk (needs to be soy to work with the tapioca flour) 5 tablespoons of tapioca flour (which makes it go “gloopy”), ¼ cup of vegetable oil ¼ cup of nutritional yeast 1 tbsp of white miso paste 1 tsp of apple cider vinegar 1 tsp tomato puree (or more, according to taste) 1 tsp mustard ½ tsp onion powder ½ tsp Marmite (or more, according to taste) Salt & pepper to taste Blend together, then cook over medium heat, stirring vigorously & continuously. Add more milk if needs thinning. NB, can get tapioca flour at any Asian store & many supermarkets.

This is one of my favorite recipes! No cashews! (I don't have not enough $$$). This spice gives it extra flavor as well. I froze most of it in muffin tins and they are great for an appetizer/snack.

It was incredible!! I actually have begun following your advice and tasting the food as I'm cooking it, and realized the chili made it too hot for me. I read online to neutralize the heat add a tablespoon of lemon juice, which worked out fine. I have 2 containers in the freezer, and enough for 2 more meals in the frig. I don't know how to quickly roast vegetables, so I just used a regular onion chopped up and that worked fine. Thank you for these wonderful meals!

I haven't had vegan Mac and Cheese made with mushrooms before. I will have to try it. I always use the nooch along with turmeric usually a teaspoon with garlic powder and a teaspoon of french mustard with cashews and almond milk.

I can’t wait to try this. The recipe I use at the moment has butternut squash and cashews which is pretty cool, but interested to try this one - and to add the liquid smoke. Squash isn’t the quickest veg to prep, so it would certainly save me some time!

I just tried this (without the chili pepper because I didn't have one), but this turned out alright. I only added 50mL of sunflower oil and I thought even that was too much. In my opinion, I think the oil gives the sauce a weird, bitter aftertaste. I would say not to add any oil and just stick to plant milk.

@@ericboller1598 you know vitalite as a butter then flour and oat milk then vegan cheese two types Tesco brand cheddar and Italian hard cheese.the vegan way is using vegetables and cashews and nutrition yeast with no cheese insight.i do it the normal way the way I did before going vegan just use vegan replacements instead of dairy!

I LOVE your recipes but I don't know how to begin a non-stick pot/pan at high-heat without messing up whatever I'm trying to eventually sweat: working on it. I did the same recipe with gluten-free rice/quinoa pasta for those hard core guys out there; instead of gooey mac and cheese I used peas and rosemary and basil and garlic and nutritional yeast for a vegan pesto pasta and … yes mushrooms came into it but same effect!!!!! TXXXXXXX!

Hi Rose, we get it in every now and again, Fallon and Byrne have it and I'm sure a few other stores might stock it. If you're making it without oil just add milk until you get the right consistency.

I have made mac n cheese like this one before and I dont like it. I have one that is cashews and chickpeas and it might be going in to my cook book coming out next year. It takes a really long time to make recipes really good. I have a vegan ranch that took over a year to make perfect.

Your potatoes might have been the waxy sort, or perhaps stored starchy potatoes, which become far too starchy for such an application.

One of your biggest fans, but I still struggle with replicating those comfort foods; you guys have been vegan so long it's not a biggie and for people transitioning to a vegan way of eating it may well be a great idea. I'm in the middle (Jacob Dylan, has to be something better than in the middle:)) Why do I want to eat something that reminds me of something I don't want to eat? It's sort of existential. I've been vegan for sometime now, perhaps not long enough, but I don't get it. Your recipe is awesome but it makes me remember the deluxe aged white cheddar etc. I'm sure I am annoying but this is the internet and I'm probably not a voice in the wilderness (that just felt like an oxymoron)….. Jaimie Oliver who will never be vegan but has transitioned closer to it over time and has huge credibility because of the risks he personally took to get all of us to eat in a more healthy way because of our children … has lots of people who criticise him virulently but he has effected real change in the diet of school children in England and the US and empowered young people at loose ends in their life to find focus … yes I want to save the planet, which could be a lost cause, or not, but … why mac and cheese?:)
