That looks really good! On a side note, I have a small patio herb garden (in pots) and I grow micro greens and sprouts in my kitchen. It's amazing how much those three things have improved the food I cook, now that I can actually afford them 😂

ALWAYS get a chicken! If nothing else, take all the meat off the bones and freeze it for later. Keep the bones for making stock. That way you have the best of both worlds ... they cook it for you and you can eat it when you're ready.

Frankie! Hey der! As you can see I live in an RV full time and I love rotisserie chicken! I cook in my RV pretty much every day unless I am on the road. I am heading from south Texas to Idaho (for the summer) and I can't wait to try this! Lots of HEBs and Krogers and Smiths between Texas and Idaho! I love those big grocery stores!

You remind of an episode of Jacque Pepin on PBS. He took a rotisserie chicken and cut it up like you did and made a mushroom sauce and put over the chicken. I had it for friends over for dinner with a huge salad. It was a hit. So, yet this was a great recipe and most likely most won't even know!

I use my Rotisserie Chicken in a Nicaraguan style rice & chicken and it comes out wonderful my wife and I can eat for at least 3 days. So simple to make
