About Master Sushi Chef Hiroyuki Terada:
Master Sushi Chef Hiroyuki Terada is one of the top Japanese Chefs in the entire world and the most popular Japanese chef on KZbin.
At age 10, Terada learned the basics of sushi from his father and then went on to attend RKC Chef's School in Kochi, Japan from 1987-1989. He soon earned a nickname for his fast knife, attention to detail, divine presentation and ability to create new dishes and accents based on traditional Japanese cuisine. After graduating RKC Chef School, he was called to serve under Master Chef Kondo at Yuzuan restaurant in Kochi, Japan from 1989-1992. Mr. Kondo is the master of Kansai style cooking, considered to be the high-end of Japanese cuisine. Terada earned the title Master Sushi Chef by becoming the standing head sushi chef & can serve Fugu (Japan Licensed) to the public.

Chef Hiroyuki Terada is using the Minonokuni Matsu-1573 210mm Yanagi. Super Blue Steel. Can also be used for breaking down whole fish and chickens. But normally for slicing, sashimi, vegetables, meat etc.. This is Chef Hiro's custom specked knife.

While sushi chefs in Japan tend to stick to sashimi/nigiri/gunkan/temaki and similar kinds of sushi that are much simpler (meaning less ingredients), I think sushi chefs that make sushi rolls have more fun and creativity because you get to experiment with many ingredients and really you can do anything you want. I personally think that when the quality of the fish/seafood isn't the best (due to availability), sushi rolls are really a great way to make good sushi. I love watching this channel for the variety of sushi rolls Hiro makes. Its very interesting and entertaining. Cheers!

Hey 🤷‍♂️ when it comes to a roll, you get a pass. It's when you accidentally drop it into the soy n' eat it, then you f**k**. I'd rather just spoon it out and skip it! Soy bomber or sake bomber 😂

Yeah, hand shredding vs. sliced shrimp just looks so much more visually appealing. As Guga says, you first eat your food with your eyes.

You think textural too or nah? Shrimp is fairly tender, even U-15. I dunno if you watched all vids in this series, but with all the prior cuts made to straighten the shrimp so they don't curl up during frying/boiling etc- Made them even more tender.... When he hand shreds it seems overall they'd have a superior texture compared to the cutting into smaller pcs. Am a little bummed they bought n' used farmed shrimp from India when they have mmmazin & well priced gulf shrimp 🤢 Maybe just me tho 🤷‍♂️

Hey guys great video it’s always nice to see you two back in action I’m a sushi chef myself in the marina del ray I’ve been watching your videos for a while you truly inspire me to put my own style on my sushi work this roll was good but some eel sauce drizzled across and maybe even some sliced jalapeños with saracha dots and instead of soy sauce some yuzu sauce would of made this a 10 -10 roll lol above all I love your work I wish you guys the best and all the great things life has to offer keep up the great work

I love simplicity and think it always wins- ya literally can never go wrong with it. But I was thinking how you could up the ante on this very simplistically. For the dressing(shrimp mix on top of roll) etc: Maybe panko is toasted. Could be toasted inna garlic infused EVOO or just toasted. It then could be topped with the whichever of following- chive oil, fried shallots+infused shallot oil, truffle oil etc.. Panko could also ONLY be used as a topping & not mixed in w/the salad itself. This roll looks amazing! Has awesome flavors/foundation and really allows for additional creativity and flavor elevation!

I'll never understand on places like Costco getting looked at in a bad light people act like their freezers aren't full of food from Walmart, Kroger,Publix,Sam's club ,most restaurants out side of a Michelin star restaurants get their sea food from the same place as the chain stores and they all get it from the Either the Pacific, Atlantic,Indian or Artic Ocean and farms ,just like Hiro says always inspect the food smell it ,look at it and if anything seems off don't consume it ....
