Let me tell you somethin... I lived in Memphis for 20+ years.. Uncle Lou's chicken is FIIIIIIIIRRRRREEEE!!!! and you can NOT eat it without the spicy sweet sauce, his corn nuggets will make you smack you friend, family and strangers the like if they try to touch it.. You have to go to Memphis and eat it in person...

Looks and sounds uber guud Big John! Like the fact the chicken isn't over dredged or heavily battered...the crispy skin is the the best part! (except for the other parts, as they must work together, doncha know.) Really good fried chicken is hard to come by, but damn hard to beat! It means something to me that you said the dish wasn't a gazillion Scovilles, and that's "low" praise from you, if you get my meaning ;) Some like it hotter than others, and I know you can take take it where I would sob like a child. ;) Believe I'd like this version better than the Nashville hot style, you can't beat sweet heat, if it's balanced - ok I'm a wimp! Already thinking of a grilled variation, using a Corruption style blend as a basis for a rub (including the cinnamon, a very versatile spice) , and I think that sauce would make a killer finishing glaze!

the sauce is pretty vicious our of the box but you can use your own hot sauce flavorings and formulas i think... its the spices that are included that are key... especially the honey and its ratio to the hot stuff! this is totally do able! you can add more stock as well in the sauce to cool it. honestly the sauce after it was cooled and placed on the chicken was way more mellow than on its own and hot.

Written recipe so I can try to recreate this (obsessed with it at Playground/Detention in DTSA): Sauce: 2 Tbsp. Paprika 2 Tbsp. Chili powder 2 Tbsp. Garlic powder 1 Tbsp. Onion powder 1 Tbsp. Hickory smoked salt (or, salt and liquid hickory smoke) 1 Tbsp. Celery salt 1 Tbsp. Lemon pepper 1 Tbsp. Cayenne pepper (optional, for spice) 1 Tbsp. Sugar 3/4 Cup Louisiana Cajun hot sauce 1/2 Cup Red wine vinegar (or 1/4 Cup Vinegar and 1/4 Cup Chicken stock to dilute the vinegar) Whisk wet and dry ingredients, heat on stove to rolling boil then remove from heat Add 2/3 Cup honey Dredge: 3 Cups flour 1/4 Cup Pepper 2 Tbsp. Salt 2 Tbsp. Onion powder 2 Tbsp. Garlic powder 1 Tsp. Cinnamon Dredge chicken thighs and legs (skin on) and fry at 370 degrees for 12-15 minutes.

Okay, one big mistake I made while trying this: in the video, I missed that he only adds "a few tablespoons" of the Corruption spices to the liquids. Do NOT add the full amount lmao. I don't love that everything was measured out but the most important combination became "a few tablespoons" but I would add it a bit at a time to try and get the color in the video without any grainy-ness. I ended up using a full cup of red wine vinegar, if you guys have ever had Detention's Uncle Lou's then you taste vinegar for a week afterward. Still playing around with it

two reasons, ( and its not that I don't use it) watching some one cut up anything for more than 1 second is pretty boring to watch, so I don't usually show food prep. second, I never cut meat on it as it weighs just about 45 lbs and is much larger than my sink and is a royal pain in the ass to wash and disinfect. as another use, it acts as raiser for the food so you can see better what I am doing (this is because of limited camera angels I have to work with.thanks for watching !
