​@@agunemonThe only safe dish Jamie makes is pasta and sometimes he still effs it up. A good chef does his research and understands the dish first and only then can he modify it to suit his preferences or even attempt to teach it to others.

"everyone can cook" is explained in the movie Ratatouille. The point is not to say that everyone can be a great chef but that great chef can come from anywhere. Also Nick won the Masterchef competition that year but the show is staged so much, hard to say if it is not designed to give someone the title at this point.

I suspect he isn't demonitized because it wouldn't effect him, youtube seems to do it to people they can use it as a weapon against. Uncle Roger or "Nigel Ng" is a famous comedian so he gets plenty of money from that.

On an unrelated note, I actually love the side-profile camera angle. It gives a very meta perspective of you reflecting upon what you're speaking. (Well, I personally never tried a lobster. Had a crab, when I was like, 11. Had a hard time dealing with it's shell)😂

"Don't assume because it makes an ass out of you and me" a classic 😂 I've lived in New England my entire life, strangely one of the very few foods I didn't like was lobster. HOWEVER, the first time I had it I believe it was overcooked plus it was tail meat. So I was just chewing forever and it grossed me out 🤢

@@Max_Sinister_26 I’m also in Rhode Island so I feel you there. However, lobster was the only seafood I really wasn’t a fan of. Clam cakes, chowder, shrimp, etc I was a fan of. However, I don’t eat any of that anymore so it doesn’t really matter 😂

I work with lobster fishermen here in Nova Scotia so I get lobster around $8 per pound or for free even sometimes. I make a lobster roll pretty much how anyone would do, BUT I add the green stuff, the tomalley, to the mix as well. Very umami, very tasty.

I haven’t been able to get past the tomalley. Any tips? Or is it all in my head and I’m beyond help? What’s worse is I’m from Jacksonville, Florida, the garlic crab capitol. I can’t eat tomalley or roe from crabs either 😅

Walmart sells frozen lobster tails during lobster season. Frozen tails are perfect for lobster rolls since you are dressing it with mayo.

As someone who spends a lot of time in the Canadian maritime provinces, i actually prefer my lobster rolls with a lightly toasted bun, filled with warm & lightly buttered lobster. The "green stuff" isn't poop. It's called tomalley and it's the liver. Some people don't like it, but i love it.

So about 20 years ago I went on a scuba diving trip in the Keys. One of the days we hit the water, we placed some lobster traps near where we were docked. When we were done diving, we came back, scooped up the traps, and had about a dozen lobsters total out of them. So that night, we killed them, butterflied the tails, grilled them all, and enjoyed them with some fresh lemons and butter for dipping. I haven't been able to order lobster ever since. And PS: I couldn't help but notice the KSE poster. KSE was my first band shirt ever. But this just invites the inevitable question: Jesse or Howard? And there is a wrong answer.

In the area of Nova Scotia I'm from lobster is boiled in water that is very close to the salinity of the ocean. Living on the prairie now really missing beach parties with lobster, and the water, straight form the ocean.

I have had lobster rolls in Maine. First time having them and OMG what a great dish. From Florida and went on vacation there. The price of lobster in Maine is so much cheaper than Maine lobster in Florida. And, so much more fresh and flavorful

Great video. You can tell Nigel & Nick are really friends. Who else would dare mess up food with too much MSG or have the gumption to give Uncle Roger a Jaime Oliver cookbook? Sa for the seafood: Oh, the memories! As a kid, I lived in CT just a few minutes from Long Island Sound. We had a boat and often went to Sheffield Island to go clam digging or to the oyster beds with my grandfather. We fished the Sound and the Five-Mile River. We weren't licensed to harvest lobster, but my parents & grandparents has a friend who was a lobsterman. seafood wasn't in short supply in my grandparent's home. In ours, although we did fish, we didn't eat it. We gave it to my grandfather, neighbors and friends because Dad & I were both allergic. We would get lobsters when my maternal grandfather came to visit, and Dad would grill steaks as well.

The irony of Jack is that I had a uncle who was like him in cooking, but he actually made it look and taste good though. He was a weird cook but it was good compared to Jack's food just watching the videos. My father was similar but loads better. He had different versions of food that probably should just have 1 or 2 different versions, but he was actually trained by his stepfather and drill sergeant. Both taught him to use what he had to make it work even if it look horrible taste was key. Dad also cooked in prison anytime he got into trouble as a punishment and he loved it. I remember one dish he made it was a mixture of eggs, potatoes, corn, tomatoes, and chicken soup. It looked horrible until you ate it then ended up back for 2nds and 3rds. Dad even had a state winning gumbo too but never officially won anything (he was too humble in the food department for his own good). We had a state judge that had his kid in school with my brother that had done many many gumbo contests literally beg Dad to enter one cause he knew he had won that years contest. Dad refused saying he didn't care for the title nor the crowd attention ( he never was a crowd guy anyways). Miss both my father and uncle as they both are gone and never left a recipe for any of their stuff (their only fault in cooking skills).

Love using fresh/still alive seafood. Best experience was a few years ago - ended up having 4 parties to do in a week, so I splurged a bit and had crawfish shipped in from Louisiana...versus the option of 'previously frozen'. Something really fun about coming home to a refrigerated box sitting at your door...and then realizing EXACTLY how much you ordered!

Lobster is a staple here in NB Canada. In fact some of the best ones come either a 20 minute drive, or an hours drive from my house. The shediac lobster have even gone as far to build a gigantic lobster statue when you enter the town. Im not kidding, look it up. Shediac new brunswick. Haha

My favorite roll? The ones from Lobster Landing in CT. But I also like a whole steamed lobster. So many people don't go for the legs and the body meat. It's like have an extra one to two claws. Why toss that away? That's perfect for bisque, even.

It’s mainly some fish, rarely prawns, mostly chicken and mutton here in Punjab. First thing I'm doing if I visit America, eat some gooood steak. Then, a burger, sandwiches and one of those New York pizzas. Oh! The staple American food, tacos, as well.

In Finland at autumn time we have living noble crayfish and signal crayfish in supermarkets and wholesale lofts. We don't kill these creatures traditionally before but instead make sure the water (with heavy salt and dill, possibly some beer added too) is boiling well. Just dump the crayfish in and their misery is over within a second.

I miss shellfish so much. I don't live that far from Maryland and it's hard to find affordable crab or shrimp that doesn't taste like latex bandaids without selling an organ. (I only need ONE kidney, right? Hmmmmmmm...🤔)

Sad to say I’ve never had a good experience with fresh shellfish because of local spots lying about freshness in California but I had a great experience with locally caught Tuna in Hawaii. There’s a fish shop in Kawaii called “The Fish Express” that catches fresh tuna bought from fisherman overnight that made a mean Poké from the Tuna. Never had Toro that good since and the spicing was top class. Really complimented the fish and the flavour it presented when fresh caught. Couldn’t recommend it enough

I used to work at a seafood place. We would get fresh, living crabs and lobsters, but we never cooked them alive. There's enough violence involved in cooking them. I would dispatch them before cooking. I presume boiling them alive was something to do with keeping them fresh as possible.

There's two types of lobster rolls, cold and hot. Cold is like this with mayonnaise, and hot has no mayo but you go in heavy on the brown butter. I much prefer the hot version unless it's a sweltering summer day. With mayo I feel like I may as well have had a tunafish sandwich.

I would love to try shellfish without the feeling of suffocations due to my allergy, rest of my family makes sure to eat my fair share lol

Chef Brian, I would like to pose a challenge to you. Currently, Im in college, and while I will not ask you to calculate Gibb's Free Energy or the enthalpy of propane formation, I would like to ask you to try and cook an intricate dish or set of dishes using a MyMini Noodle Cooker and Skillet. It and a kettle are the only two appliances I am allowed to have in my dorm, so im curious what you can do with those two items. If you're up to the challenge ;D

This is an amaxing video for me to watch it like million times like usual chef! but as a film maker standpoint. I have some advice for you and jordan to handle your new camera's work. I think you should move your second camera to your left hand and put it high to look down at you(It call High angle) because in this video for examples. your main camera is from your right hand 45 degrees angle and then the camera transition from right angle to...more right angle? I think put it on your left hand will make the cut looks more fresh and appeal to the eye instead of feels unnessessary redundant. another thing is the cutting I think the second camera being on high angle and put further distant than the first will add some benefits like when you had to do some acts like showing your equipment or something you can had a larger space to do, also if you gonna use the shot of the second camera it should be the shot that chef look at the camera. so IMO you can use that camera when do something like "Take a shot!" then point at the camera, or, when chef laughing so hard so we can see the whole movement chef does with uncle roger jokes. Hope your camera works get better chef!

Thanks for all this amazing advice! I’m actually limited by the placement of my desk and small office. Also the side angle happened to be a bi product of setting up a 2nd cam for guest who I plan to feature more frequently!

I actually made this dish, I think it was good but it made me realize I dont like lobster. But I did use frozen lobster tails and it was from krogers, so it was most definitely not fresh.
