Great job Uncle Roger! Love your videos! I've seen people freeze the beef chunk a bit before slicing so it's not squirming like jello when being cut. Do you approve of that? You can slice it beforehand anyway and let it rest till room temperature as the hot soup will cook it anyway after you assemble. This is my favorite dish and I absolutely eat it at least once a week to make me go into my happy zone.

Pho is actually French, the Vietnamese learned some French cooking and learned "pot au feu" and slightly changed the recipe. The name Pho sounds very similar to "Feu"

I’m quite skeptical about how it actually tastes though. I’m sure it’s gonna be better than most Pho you can find in western countries but compared to authentic Pho (northen style) in Vietnam, that broth does NOT look clean at all.
