Thank you so much for the feedback on the video ☺️ I love your suggestion about including b12 & supplements (I always assume people know this, but am totally taking that for granted!). As a whole, it meant a lot as someone who initially was very much influenced by the early vegan youtubers regarding what vegan food “should” look like. Also, taking notes and will be trying tofu french toast, barilla pasta and the nugo slim bars ✍️

I’ve been vegan since August of this year. I started eating lots of beans and grains but I got so sick with digestive issues I almost quit veganism. I had to take it easy with the beans I am eating more tofu for protein. I am also eating more fermented veggies and fruit and it has helped a lot.

Also, some mock meats can help with this. We were raised mostly vegetarian, and I am now vegan. My sister is semi-vegetarian, and she cannot handle beans like me. She does like some Gardein and Beyond Meat options when trying to eat less meat.

I mainly use textured soy protein (since before veganism I usually ate minced meat) myself, maybe that could be something that'd also work for you? The very least it would bring you more variety/option in protein sources ☺️

Yes, textured soy protein is great. Highly recommended. About the beans and lentils: It helps changing the water once during cooking and some ingredients help digesting. Cumin is good in those dishes and in Austria we always add a teaspoon of a special vinegar blend. The closest thing would probably be white wine vinegar. Pure apple cider vinegar would taste weird I think.

For the chickpea pizza: try to let the dough rest out of the fridge for a couple of hours, that should break down some of the phytates. If chickpeas should be soaked before cooking (usually 12 h), so should chickpea flour, which is nothing but finely ground raw chickpeas. I hope this helps

As someone w/ a serious digestion disorder, I definitely rely on protein powder as part of a non-vegan diet. I can't eat domesticated red meat (wild game is ok), beans, dairy, or any high fiber protein & my appetite is tiny when I am sick. I ❤️ that you acknowledge the various reasons people are here & the challenges some of us face to eat ethically, and also manage a strict budget, conserve energy, get nutrients & not make ourselves sick.

I would love to see you review June from the Delish channel's recent budget eats video. She decided to put herself on extra hard mode and made herself follow a $25 budget (for two people) and eat both vegan and gluten free. I really loved her creativity, but know that the amount of time and work she put into cooking to make these budget ingredients tasty is not something a person truly struggling to buy food likely has.

I haven't watched the whole video yet but based on the small about that I saw it's all fresh veggies. Frozen or canned vegetables will save a ton of time because they come pre-chopped, and they're also often cheaper. And if you find fresh vegetables at a good price, you can dice, blanch, and freeze them yourself if you can find 20 minutes to spare. Aside from that, a food processor is a top notch shortcut to cutting things up if you already have one. Other ways to save time while cooking would be making your own sauces/spice blends ahead of time and just having them handy in the fridge or pantry (assuming you already have the necessary ingredients). For instance onion powder, garlic powder, paprika, salt, and pepper make for a really great and inexpensive spice blend. Homemade mayonnaise is also very cheap and good to have around although it takes some practice. You can also make a big jar of pickling liquid for quick pickling onions and other veggies later, and you can make a curry paste with the exact level of spiciness you like. None of these things individually take more than 15 minutes or so, so if you have a plan for stuff to prep you can get quite a few shortcut ingredients prepped when you do find those spare 15 minutes a few times a week. Other time savers are to do stuff in big batches - cook all your dried beans for the week at once, or make a massive batch of caramelized onions to last a full month, or on a simpler level double or triple an inexpensive dinner and freeze portions for a later week when you're extra busy or just tired

hey! a chilean brand (the not co.) announced they're going to sell their plant-based milk in whole foods. as you can imagine, the vegan market in latinamerica is not that vast (we have limited access to mock meats, for example). they have made mayo, ice-cream and burgers, and actually worked with burger king to offer vegan burgers (super big deal here). so yeah, i was wondering if you would try it if you had the chance. i like it a lot, it's the reason i cut most of my dairy this year

I've noticed that canned beans give me gas too, so that's why i avoid them. It is more convenient to buy canned beans, but if you have time try cooking beans yourself. I usually soak dried beans in water for minimum 12 hours and rinse them and then boil them until tender (right before they start falling apart) and rinse them once again. You can cook them a little bit less and then if you're making soup, you can cook them in the soup so they reach the desired tenderness there, just make sure to rinse after the first boiling, then you can continue cooking them for the second time without rinsing. It's a little bit time consuming, but you can cook big batches and freeze them. This is the method that I follow in order not to have gasses from beans.

Using chickpea flour is a tough thing in a lot of recipes because chickpeas are hard as a rock I put through an incredible grinder that would be grinding rocks so it's very raw. Mixing water and putting it in a frying pan isn't cooking it all the way through. So the best thing to do if you can is to add boiling water to just the chickpea flour the night before and then continue with the rest of the ingredients the next day. It helps a lot! Depending on the recipe of even boiled it with water and a pan until it's not hard as a rock but definitely cooked and thickened then out of the soy milk baking powder whatever other ingredients are going to make it into what it is including flatbread made with sweet potatoes or butternut squash. It's always good to get it as cooked as possible before you cook it.

Here's the thing with bean powders [dry beans ground into a fine powder], not only do you still need to cook it ALL THE WAY, but even my pressure cooked whole beans can be unkind if you are sensitive to the enzymes. I soak mine with 1tsp of baking soda for every 2 cups of dry beans and then pressure cook them in the same liquid for 30 minutes. This change in the PH level of the soaking liquid [I use broth, but it could be water] eliminated all digestive issues for me...and I'm sensitive to canned beans, so it works. Doing this method with bean powders is - well - not convenient. I cook the whole chickpeas with my method and freeze the extra to blend up, mash up, etc.

Speaking of finding tempeh, you can sometimes find bulk Soy Boy brand blocks at natural food stores. It's typically much cheaper and bigger (2.5 lbs) than the small lightlife packs (8oz)

It's funny, here in Germany the Barilla protein pasta is quite expensive. But we have some good discounter lentil pasta here.

The problem with convenience/products is that they get expensive fast. Here whole wheat pasta is ~2.50. Protein pasta (lentils, chickpea, I think they had edamame as well and some kind of mix) is ~6 bucks, for about 2 cups of dried pasta. Great for a depression convenience meal, but when you're low income you have to get really creative to get everything in.

You can make homemade tempeh for pennies if you don't like the one brand you have the access to. If you don't have tempeh starter locally, you should be able to get it online, since you're lucky enough to live in the US where it's available :)

On protein pasta: if you live somewhere with Aldi here in the states, they regularly sell bean and soy based pastas and prices much better than the average grocery store. I like their red lentil rotini a lot and recently as a special they even had green lentil no-boil lasagna sheets! They also often have chickpea penne and black soy, edamame, and regular soy spaghetti. I’ve not tried the soy spaghetti but the chickpea penne is good.

My favorite source of protein is probably soy curls, but I never see anyone mention it. It's like tofu, but less processed, a better texture, and more fiber.

I don't know the price difference in the US between regular and protein pasta but here in germany it's pretty noticeable so what I like to do is do 1/3 to 1/2 protein pasta and 1/2 to 2/3 whole wheat pasta to get some protein but not bust my budget. I also prefer to have some source of whole grain in every meal rather than just relying on protein rich foods for satiation and carbs so it works out well

I live in a smaller community in Canada and we have to go to the Chinese grocery to get tempeh, so definitely not a name brand you’d be able to see, and 1.5 from where we live so it’s more of a treat thing. I love the stuff though!

For your background you should paint a square orange which is pretty on brand for unnatural vegan! Maybe even a round cucumber, pretzel shaped carrot, triangular celery, rectangular grapes, and ummm I’m running out of shapes and produce. 😆 you get the idea though lol

Me, also eating "like a kid": Ok, gotta figure dinner out. Let me take this slice of left over bread for carbs, oh nice, I still have a tofu burger patty I can have for protein! Cool, now steam some carrots and broccoli and put pesto on everything. Done. Master chef. Veganism prevails

I know it's typical for processed/prepared food, but do you find it frustrating that most of the mock meat options (if not all) are really high in sodium? I eat them occasionally because of the protein content but I'm concerned about consuming too much sodium. Even protein powders can be high in sodium. I think that's crazy lol.
@victoriav117

@@sharneemac1014 Yeah that's what I do whenever I eat them. It's crazy that even things you wouldn't think have sodium are actually high in sodium. So I can imagine that being on a low sodium diet can be challenging!
