Using Up Last Year's Butternut Squash Harvest!

While making room in the basement for this years harvest, I knew it was time to process the butternut squash that had been down there since 11/2022! Join me while I process the squash and some garlic scapes from this years harvest and make the yummiest puree!
Recipe:
1 large butternut squash halved
3 garlic scapes cut into 1" pieces
olive oil or oil of your choice
salt and pepper (optional)
1/2 cup coconut milk (or milk of your choice)
2 tbsp butter

Thank you and thank you for watching. There are many uses for it, depending on what you add to your purée. I love double baked potatoes using the purée with the garlic scapes but I wouldn’t use that one for baking muffins or breads. You can use the plain purée for baking, dips and more!
