This is is so tempting chef. Soup is my staple dinner along with a salad. So I have learnt to make many versions. Mostly thanks to you and few other chefs like you. For creamy vegetable soup I add a few cashews while roasting / frying the veggies. Then no need for flour. Can still add the flour if one likes. I make veg stock at home and store in fridge. But at times I have used store bought stick cubes also. Sometimes I add few chunks of paneer while blending if I am making for guests and want a richer soup. Another small variation is that I roast 2 tsps of barley dalia and add while blending or couple of spoons of cooked barley. All these make the soup thick and creamy without having to add flour or fresh cream. Also I dont add potatoes if I am adding all these. Thank you as always, for a very delicious recipe and the lovely video.
