VANILLA CAKE
Serves 30
Cake
429g all-purpose flour
265g caster (superfine) sugar
3 tsp baking powder
1/2 tsp salt
125g unsalted butter, softened
375ml of milk
2 large eggs
125ml vegetable oil
2 tbsp Greek yogurt (can substitute with sour cream)
1 tbsp vanilla bean paste
White chocolate ganache
300g white chocolate
1 tbsp butter
125ml thickened/whipping cream
1 tbsp vanilla bean paste
Frosting
2 batches Swiss meringue buttercream frosting
1 tbsp vanilla bean paste

Oh Nick! You cut that piece of cake the way I like. At birthday parties, you want this piece? No bigger. Bigger. Cut it like Nick does. I WANT the cake! I actually thought it looked like cheesecake when you were about to divide the layers. If I bake a cake anytime soon, going to make a Scran Line so I can do your method. I prefer cakes like you do. You are such a guilty pleasure. Scran Line cake is not conducive to Keto but I am a Sugar Rebel through and through! Only watch no eat.

A word on bowl size. I own a KitchenAid Professional 5 Plus stand mixer which has a bowl of 5-qt volume. I was able to double the recipe today, but did this with extra caution. I used a hand whisk to mix dry ingredients in the stand mixer bowl, and toss in butter, used the PADDLE attachment (not whisk attachment) and started with STIR speed in stand mixer to crumble butter and dry ingredients. The max speed I went here is 2, any speed faster than that would result in flour overflow based on my observation. After adding milk, use STIR speed again to incorporate the liquid and you will see the batter decrease significantly in volume. Then I added oil, eggs, yogurt and vanilla extract, again mixed with speed 2. it is okay to go up to speed 3 or 4 at this point for the last 20-30 seconds or so but be careful not to over mix. The batter will be very thin and pourable, easy to weigh and pan. Hope this helps people who are as confused as I was about the instruction.

million thanks for your tip of baking the cake at 140°C!!! I used to bake at 165° which I think is low enough though it still results a peak (not very sharp and high). But when I tried 140°C, I blow my mind!!! The top is so flat that it needs nearly no trimming. It saves so much cake!!!!! Thank you once again. You are genious.

I have a huge stainless steel bowl I use for pizza dough. It can fit 2 batches; BUT my hand mixer is useless so I just get out my 2 mixers to do 2 batches at a time!! This recipe is the best ever and so versatile. 👍👍

This looks so good! 😍 Vanilla cake is 110% better than chocolate cake, in my opinion. Have you ever made an Angel Food cake? I usually prefer a denser cake too but angel food cake is so soft and lovely.

I made this cake for my daughter's birthday & it was awesome. It was very fluffy and had great vanilla flavour. Everyone loved it. The drip was harder to do than it looked. Will be my go to recipe in the future. Love all your recipes & thank you for sharing. 🤗

I have found that your recipes come out far better than anyones recipes I’ve followed here on Facebook! I’ve attempted so many other KZbinr’s cakes and nothing cooks up quite as nicely as yours do. It could be altitude for other cakes and cupcakes I’ve tried, but I’ve found that your cakes are the sweet spot (literally) for any of my altitude concerns or “skepticisms” (if that is the correct word). I love baking from scratch and finding new ways to approach things and I really enjoy this method a lot because I’ve also heard that the butter coats the flour and that assists in the possibly of over mixing the batter and the glutinous properties of the mixture as a whole. Whether that’s actually the case or not, I enjoy this method regardless and can happily say that your recipes are my number one go-to when anyone is wanting cupcakes, so I thank you for that! :)

Funny, I knew the answer as soon as I seen it because I do a vegan version of it. When you coat the flour with the butter it coats the dry ingredients so the dry ingredients are then protected by the heating elements and thus stay moister after baking. I do it all the time! I also use vegan butter, vegan yogurt, almond milk or oat milk and in place of eggs you can use apple cider vinegar and it comes out just as good. I’ve gone both versions, no difference

The reserve creaming method is wonderful. I totally agree, the traditional creaming method tends to produce a drier and denser cake, much like a pound cake.

I have always baked the best chocolate cake.. but when it comes to vanilla cake they turn out flat, hard and dry. Barely risen. Never get that "box cake"- betty- crocker -duncan hines result. And I hate it cuz many people just ask for vanilla + extra flavoring cake. Starting from vanilla cake. What am I doing wrong?

Brix Perez OMG in my case is the opposite, my vanilla cake comes really moist and fluffy, but so far I haven’t find a great recipe for my chocolate cake I have try with oil, butter different methods and So far I haven’t find the perfect chocolate cake recipe. yet. ☹️

I watched your live Instagram video. I tried to message afterward but just in case you never read it there you need to read this at point. Your cupcake and cake brand are “you” I can scroll through Pinterest or Google and find your special unique cupcakes or cake. You use “amazing “ flavorings “ and what makes yours so hip and unique is the way you swirl and frost with color and your artistic themes . So You are not the “Fondant “ baker and Fondant to me is not edible . Your frosting is what I call “lickable” fun ( if that’s a word ) and brings out the fun and hidden kid in all of us. “Fun” “ Happy” and surprise. I'm a new follower & had to chuckle about the butter not being creamed first. I never do it either! I guess because my Mother never did so I never give it much thought but definitely I don't make dry cakes so it works 😉 love this vanilla cake. I was actually thinking it was the post to the rainbow 🏳️‍🌈 cake I just saw on IG. Do you have to keep a cake made with buttercream refrigerated? If you can keep it out how long do they stay at room temp?

Better to be refrgerated..how long, It depends on the climate where you live!! In summer not good to keep long time outside as its buttercream frost.. !! Hope you got it 😊

It all depends on how hot it is - in summer in Australia, you would normally refrigerate after a couple of hours. But if it's not so hot outside, you just need to think about the temperature.
