Vitello tonnato, also called Vitel Tonné, is a Piedmontese recipe with a very long history. In the new episode of the "Original vs. Gourmet" series we will retrace its gourmand evolutions thanks to the chefs of two great places of Turin taste: the Osteria Antiche Sere and the Michelin restaurant Del Cambio. The 'classic' version with mayonnaise and tuna will be followed by a 'phylogical' reinterpretation by Matteo Baronetto who will retrace the history of the dish from the 1700s to the 50s, passing through Artusi.
