If you don't have asbestos fingers, you can use a big scone cutter, set it on the paper and fill it with the mixture and push it together with the back of a tablespoon. The ring lifts off and you've got perfectly formed burgers - and the skin won't be lifting off your hands! Love you recipes.

You guys should experiment a little with polish bigos, vegan version ofc. It's warm cabbage stew and it is very satisfying dish during autumn/winter.

I tried the patties by themselves, with some side vegetables. Delicious. I don't digest beans well so I switched them for mushrooms and fresh turmeric. I love the flavour. Thank you guys, I wanted to include tempeh in my diet but I found it very ... thick and boring, and this is great.

So question, I don't usually use tempeh all that often but I always have a medium or firm block of tofu around. Could I use that instead? Or would I need an additional binder to get the same texture for the burger?

Introvert Meets World I had this problem too, if you steam the tempeh beforehand it gets rid of the bitterness. Or like they did here use a sweetener like maple syrup and that will take the bitterness away too

CraftySamarita I've done both. When it's in a more complex dish like this, I don't even notice the bitterness - especially when there are sweet elements like the maple syrup that balance the flavor out.

I think whether you find tempeh bitter varies a lot between people. I never steam it and don't find it bitter at all.
