This is a game changer!! Deconstructing the egg and making a yolk sauce is GENIUS!! We made it tonight and it was delicious. I haven't eaten eggs in about a decade so I can't say for sure that it tastes like an egg yolk but it does taste exactly like what I want an egg yolk to taste like - the egg yolk of memory - rich,decadent and delicious! I will use this sauce for tofu and hash browns, toad-in-the-hole, so many things! First it was the nacho cheez sauce and now this yolk sauce - Lauren, is there anything you can't do!?!? Molly Considering the comparison of the non-vegan version I'd say I'm pretty secure in believing it's healthy. As long as it's in moderation it's okay. I'll enjoy my breakfast with vegan butter and refined flour since I only live once, but you go ahead and enjoy a pompous breakfast of just fruit and veggies 😊 Heaven forbid someone wants to eat something delicious once in a while.

Alicia Renee I didn't say I don't eat these things nor that people shouldn't. It seemed from the comment that you were thinking it's healthy when it's in all likelihood no better than the animal counterparts. Vegan butter is often more unhealthy because of transfats. Doesn't mean you shouldn't enjoy these things, I'm just pointing out that the "it's vegan so it's healthy!" mentality is fundamentally flawed. That's all. I enjoyed my toast and vegan butter with jam this morning. It's not a big deal.

I’ve done a similar recipe for the yolk: veggie broth, nutritional yeast, veganese, salt and cornstarch you can also add turmeric to add vibrant color. I’ve also used a store bought butternut squash soup as a vegan egg yolk substitute - heat soup in pot add corn starch and salt.

OMG YES. One of my favorite meals growing up was homemade pancakes with fried eggs layered (my dad had them growing up, but the pancakes were too sweet so he did that) sweet and savory...BOMB. I can't wait to make THIS and also try the yolk sauce/egg situation with other things!!!

I will have to try this recipe when the fall/winter weather comes. I will have to find the recipes, though, for the tempeh bacon, and the biscuits. One idea I will also try......slather both sides of the biscuit in the egg then put sausage on one half of the biscuit, then put the tofu on, cut a small hole in the tofu, add a little more egg sauce, then add maybe vegan Canadian bacon, and the other half of the egg-slathered is sounds too good, but I will be making the breakfast trifle.

I made this and it was good! But I admit I did make a couple of substitutions. I used fresh ciabatta (prepared just like these biscuits) because I had it on hand, sprinkled a pinch of kala namak onto the tofu near the end of frying it up (you're right - the heat killed the flavor so that was pointless), added some oven roasted small potatoes sliced up, added a bit of Daiya cheddar shreds (the new, meltier, better tasting "Cutting Board" line), and used The Vegg instead of making yolk from scratch because I also had that on hand. The Vegg is good but really too rich for this. I was done about 2/3 and had to force myself to finish because it was so heavy the way I had done it. I also think I overcooked the tofu by maybe 2 minutes because it was a bit dense and rubbery so it probably dried out a bit. I might try this again following your recipe more precisely next time.

One thing I miss are all my eggy breakfast varieties. I’ve never been into having something sweet for breakfast. I’m definitely making this!! When I was in grade school, I got diagnosed with an egg allergy. I remember really loving eggs, but I haven't had them in so long, I don't think I actually know what they taste like anymore. However...I'm totally trying this recipe, and I'm inviting my omni friends and vegan friends over for brunch when I do, because I'm so curious how "eggy" this would be for someone who eats eggs. I know I'll be happy, because fried tofu with vegan butter and FYH vegan egg is pretty much how I make my vegan fried eggs, at it hits all the "egg" buttons in my brain. But I'm totally excited to try this.
