This rustic vegan lemon polenta cake recipe is old world delicious. The course texture of the polenta softens when the sweet and tart lemon syrup is drizzled over the top to gently soak into the cake. This recipe will bring a bit of lemony sunshine to these long winter days. As with all our recipes this cake is whole food plant-based, gluten-free, and refined oil & sugar free.

I made this today, and just enjoyed my first slice. I used cornmeal, as I had no polenta. This is one of the best vegan cakes I have ever eaten!

As an addition to dates, I'd love to see you make some use of premium pitted prunes in your cooking which have a lot of nutritive value. Thanks

I already have your cookbook and I love it ,I already Tried mostly every recipe in there and they turned out wonderful and delicious ,could you please please do another cookbook with the recipes that are not in there I would love to buy it , thank you so much for sharing your wonderful recipes with us I love them all, God bless you and I will keep you in your family and prayers to continue creating wonderful healthy food to share with us!

Hi Luz Planas, so happy to hear you are enjoying the cookbook. We will definitely be doing another one (hopefully many more) and will be starting work on it here soon. This one took an entire year from start to production (is crazy how much work these cookbook are) so it may be a while, but thank you for your support of the show!

Yummie! Just made it. I love that crunchy texture from the corn grits. I found it in my grocery store by Red Mill. (Shhhh...too lazy to make the topping so I ate it with almond yogurt. Just as delicious!)

use a pen eraser to make holes on the cake to soak in the lemon sauce

I love your recipes, can I suggest adding half the acua faba to the dry mix and then folding in the second half, it will make the fold more effective.

@Maria Ale: If you use part of the aqua faba directly in the dry mixte, it will probably be missed for the fluffiness of the end product.

This may not be a topic you know how to tackle but I would love if you were able to someday make a video explaining how to translate your gluten free recipes to use gluten flour (like pastry flour). I have tried to convert them myself with disastrous results but other recipe options are limited since no one else sweetens with dates! I really love a fluffy cake but it’s hard to figure out how to substitute the oil and sugar in the standard vegan recipes.

You don't need to use vinegar when you have lemon juice. They both are acidic. I was taught to eat the white part of the orange when I was growing up because it has bioflavonoids. It is not bitter. I don't know about the pith of lemons. Not good in a cake, but may be good to just eat on its own.

What can I sub almond metal with? In Argentina that is just super expensive, while polenta is really cheap

I look for actual polenta mix but can never find it in the stores. Can you please share the brand name you use? Is there really much difference with stone ground corn meal? Very eager to try. I'll probably be eating it for breakfast!

There is the Vitamix which would be my first choice even though I have a Blendtec. I love my Blendtec because of the blunt blades and the silent case but Vitamix is much more affordable and has the tamper tool. amzn.to/3cx8hZd Nutribullet Pro would be my second favorite as far as smaller blenders go. It is a workhorse! amzn.to/3at13CK

Durum is wheat and polenta is corn I haven’t tried using durum in this Recipe
