My daughter came over and helped me bake this. The only thing we couldnt do was make 3 layers we made 2 but it was good, I think I should have used more vanilla and more peppermint though. We couldnt taste the peppermint with just one tsp. but overall this was good. Thanks.

This was a hit! Replaced half the cashews with tofu in the frosting because that is what I use to make my tofu chocolate mousse. Everything else was the same. Delivered on the rich chocolate and mint flavor, great texture in the cake, and just the right amount of sweetness. Made into 12 servings to make it a little more doable on the daily ;) Thank you for this, Jill!

Yum! I made the Oreo cake and it was yummy. I’m a huge mint fan, so I’ll definitely make this one too! I have silicone cake pans too, I am always so nervous won’t them bending so I sent them on a flat baking sheet and just carry the baking sheet

Hmmm, not 100% sure this recipe would work without the nuts. The cake might be a bit dry and bland but here is my suggestion to try. For the cake you could try using all oat flour and for the frosting, you can replace the cashews with regular tofu.

Jill, I very much enjoy your tutorials. I have recently discovered a rare sugar, allulose, which does not affect blood sugar. Dates really raise my blood sugar. Allulose is not as sweet as cane sugar. If I use allulose instead of dates, I wonder how much allulose to use instead of dates. If you used cane sugar, for example, how much would you use for this cake? It would give me an idea of how much allulose to use instead of dates. I am not a fan of too much sugar, less is more for me. Thanks for all your wonderful cooking, you really rock!!
