I was so excited when my aunt sent me the link for your bolos levedos! I haven't had them in years since I became vegan. (didn't help that Vavó lives in one province, me in another when I was just a vegetarian).What a delight to come across all your amazing recipes especially the Portuguese ones I grew up with and learn that you are also Portuguese - WOOT! How exciting (Itold my aunt that she made my day :) I haven't had a chance to make anything yet and very much looking forward to it. If you are interested in replicating my Vavô's beloved Salada de lagosta a Pereira into vegan, let me know! Adeus!

This makes me SO happy! So glad you're aunt shared my bolos levedos recipe! I LOVED them as a child and was determined to make them vegan! They've become a weekend favourite for us in the morning with a tea or coffee :) You'll have to keep me posted when you try some recipes and let me know what you think 🥰 And YES! Would love to vegan-ize your Vavô's Salada de lagosta a Pereira! Sounds delicious! I will most definitely keep you posted on what I make whether Portuguese inspired and not ☺When our heatwave subsides, the oven will be in use again and more stovetop cooking. In the meantime, I see a Lobster Roll in my future 😋🤤 Wonderful - Vavô's lagosta salad recipe will be sent to you 😀 (hopefully I have an electronic copy of it). I have no doubt you will make it wonderful and bring back sweet memories for me🤗

That is more like salad dressing than mayonnaise. Mayonnaise doesn't spill off a spoon.

It is certainly less thick. It does hold on a spoon and will thicken a bit as it sits in the fridge but it is a little less thick. The concept of blending silken tofu does actually make a great alternative for creamy salad dressings too though 👍🏼
