just tried this and it was great! I used cream cheese as well as oil (and some of the chickpea water), and chilli powder. Next time I think i'll also add some more pepper and maybe some onion powder. Also the parsley really adds alot to the flavour!

A Chickpea Melt! For my recipe i use a quarter cup of tahini per can of chickpeas instead of oil. (this recipe is also good mixed with macaroni for a nice cold pasta salad)

Your sandwich looks delicious!!! I make a similar sandwich I call a tunaless "tuna" with a can of chickpeas by adding a sprinkle of celery seed, diced red onion, a vegan mayo I make from tofu & lemon juice, add in a little sweet relish, along with a ground up nori sheet to serve as that hint of fish flavor. Like you, I'll lightly toast up the bread and thoroughly enjoy that sandwich! Next time, I'll have to add a slice of my fav vegan cheese to it. 😊

This looks awesome! I've been making vegan chickpea salad for years, with a little bit of dill, vegan mayo, tiny diced onion and celery, salt/pepper & a light dash of lemon juice. I've eaten it straight out of the bowl, on a sandwich, or with crackers. - but never as a grilled cheese 😊 and now I can't wait to try this, thank you! The Follow-Your-Heart smoked gouda is good, but I adore the Violife smoked provolone 👍

Just discovered your channel and I can see already I am going to be a regular viewer!!! I am not vegan (yet!) but between a nasty allergy to cow milk products, and getting older and working on staying healthy, I have been gradually transitioning to a more plant based diet. You had me at the FYH smoked gouda cheese - my favorite too! The lid is the only way to go - it allows the heat to melt the cheese before the bread can burn!

Just made this today! It was another home run mate! Didn't have Vegan Gouda but had my home made ultra thickened Vegan Nacho Cheese I use for grilled cheese (thickened with cornstarch and oats) then frozen and shredded onto the bread before grilling. Works for me!

Thank you for posting. I keep my scraps for my veggie stock bag or the compost. The parsley stems would be great for a veggie stock -- I don't eat as much bread so I roll my chickpea salad into nori sheets and serve them burrito style.

Cool idea. Hmmm… Chickpea tuna sushi would also work. Thanks for the idea. ✅ Sometimes I make a salad with cherry tomatoes, avocado, bell pepper, green onion, fresh dill etc., add a large scoop of batch cooked chickpea tuna, and homemade ranch(w/silken tofu as the base). Love easy meals.

Instead of throwing the parsley stems away, keep them and all your veg scraps in the freezer. Then when you have enough make healthy ceg stock. It's delicious when added to recipes and best of all its free and stops food waste 😊❤

If anybody wants to do an oil/mayo free version, I use one can of chickpeas instead of two, and add maybe two or three tablespoons of the aquafaba (chickpea water) and a quarter wedge of lime or lemon to give the dry ingredients some liquid to bind together. Still tastes great, and it's a much healthier option.

I do what you do plus I don't use the fake cheese, I spread one piece of bread with some (warmed) tahini, which is reminiscent of melting cheese. I toask the bread first. Spreads easier, then I "grill" just to rewarm everything.

That's what I usually do, and when I'm feeling decadent, avocado tastes better than oil or mayo and it's real food! I hate to see food waste, I never throw those (pricy) parsley stems away... I put all my veg scraps in a freezer bag and make my own free broth when it's full!
