Can you guess the base of this HEALTHY vegan ice cream!? Today we are making dairy-free, egg-free, nut-free and oil-free ICE CREAM with NO bananas and NO coconut milk! This ice cream is so delicious and creamy, but is full of healthy vitamins and minerals. It is WFPB (whole food plant based) and makes a perfect dessert for anyone on a weight loss journey. 🍦 Sweet Potato Ice Cream!
400g sweet potatoes (previously baked at 400F for 45-60 min) I prefer the Japanese or Caribbean sweet potatoes with a purple exterior and white interior
1 3/4 cups plant milk (I used vanilla soy milk)
1/4 cup maple syrup (or sub date paste)
1/4 tsp. vanilla
Pinch of salt
If you'd like to make the peach flavor: Add 2 1/2 cups peach slices and 1 TBL lemon zest
Add all the ingredients to a high speed blender and blend until smooth and creamy. Add to the base of your ice cream maker (if required, make sure your ice cream maker bowl has been in the freezer for at least 18 hours, preferably 24 hours, so that it is well-frozen).

Love the dress - so pretty!! I’ve made dairy ice cream in my old cuisinart maker for years, but as I transition into being vegan I’m so excited about trying this! And as a southerner who gee up on sweet potato pie, making ice cream with them seems entirely natural. 😂

I think you’ll find it fun to experiment with some vegan ice cream ideas since you’re familiar with making dairy ice cream. 😄 Lots of base options too… cashews, coconut, soy cream, etc. Now I’m craving ice cream… will need to do some more experimenting this summer!

I made this today and holy moly was it good! Instead of peach, I added cinnamon and sweet apple pie balsamic vinegar and it tastes just like an apple pie! This will definitely be my Thanksgiving dessert!

What a great idea! I am definitely a chocolate lover so adding cocoa and then topping with toasted coconut I think would be delicious.

Yes! I'm definitely thinking to do a chocolate version with it! Chocolate and sweet potato are such a good pairing. It really hides the sweet potato well. 😋 Great idea to add toasted coconut on top! YUMMM!

This looks sensational- it’s so innovative, I dunno if I would leave out the lemon zest ?! Can you try adding some peanut butter and coconut caramel ? I dint have an ice cream maker , but I could be pursaded to make some ! Ps you know your vids are like asmr. You're too kind! 🥰🥰 You can definitely leave out the lemon zest!! In fact, the "base" is just everything up to the peaches & lemon zest, so just leave those 2 out to make other flavors. Peanut butter, caramel, maple pecan, rhubarb... those all sound great! (Maybe not all together though. 😜) Give it a try without the ice cream maker. I left a link in the description box on a few different ways to do it if you don't have an ice cream maker. 😊 Very glad you enjoyed and found it relaxing! I can see this becoming a series as well.... 🤭😉 We're pretty ice cream obsessed these days!

Thank you for this whole line of exploration! What are the taste and texture pro and cons of using WFPB sweeteners like date syrup, powder, chopped dates, and erythritol or monk fruit and stevia combinations? Would figs or dried prunes be awful? Silk makes an unsweet plain and unsweet vanilla soy milk, but they do add "natural flavor" which Dr. Greger warns is sometimes a cover for nasty ingredients thanks to industry lobbying. I have never discovered what a given company adds under this cloak.

So glad you enjoyed! 🤗 Great question... I haven't tried most of those, but I don't think it would alter the texture as much as the taste. If you're using an ice cream machine it's quite easy to get a good result for the texture. For taste I would say it's definitely up to personal preference! I don't think figs or prunes would be awful... just quite unique! If you're used to using them as a sweetener already, I'm sure it'd be tasty!

They definitely work well! Just maybe will have a slightly different flavor profile. So for example I used them in this video: kzbin.info/www/bejne/o3WQmKOeoM9sbposi=Z7uw8W0GKLZGhWOw with a more caramel/ maple flavor and it complimented the sweet potato flavor really well. So for orange sweet potatoes I’d stick to flavors like chocolate, caramel, maple, etc. That said, you could always give it a go with other flavors and see how you like it! 😃

It is usually not the same, no. 😊 You want to look at the ingredients on the bottle and check for 100% maple syrup. Pancake syrup usually has ingredients such as corn syrup which are not ideal for a WFPB diet. If you have any more questions, just let me know! Re-watched this video, as I'm thinking of trying to make WFPB ice cream (again). Recently, everyone is raving about the Ninja Creami. I picked one up at Costco for $149, on sale, mainly because (of course) they came up with a new improved model. But hey, I'm happy to try the original. Chef AJ said it was better than using the Champion, and others have made similar comments. A neat machine to have to make your few ingredient nice cream turn into a creamy dessert. Do you have this machine? I can't wait to try it. (I bought he Cuisinart ice cream maker, but this Ninja seemed better for like just two people.)

Oh yes I've seen some people posting about the Ninja Creami! That's great that you got one to try it out. I don't have one and I'm very happy with my Cuisinart so I don't see myself getting one.. but would love to know the differences between the 2 if you notice any? I'm sure a sweet potato ice cream would be great in the Creami! 😃😃

If you want to shave 40 minutes off of preparing your sweet potatoes for your ice cream, simply clean them, poke holes in each potato, and cover them with a wet paper towel,..then stick each of them in the microwave for 5 minutes! If you are cooking more than one potato, 15 minutes should do it

I've been eating it throughout the week and weekend and it has maintained a pretty good texture! Our freezer is FREEZING (like _too_ freezing LOL.. I need to figure out how to adjust the temperature on it!) so I need to take it out about 20 mins. before I want to eat it so that I can scoop it easily. Usually I don't need to let it soften *that* long for store-bought ice creams... but I'm pretty sure that's from those "extras" they add in (like guar gum). 😄 Overall, I am pretty impressed with the texture created by the machine. I might play around with thickeners and stabilizers as I get more advanced! Hehehe. 😋

Yes, definitely! I like to use whatever’s easy to find at the store… but certain varieties are sweeter than others, so if I can I tend to use the sweeter ones. 😊 Enjoy!

I love those sweet potatoes. Unfortunately where I live in Western Australia I can’t buy them. They used to be available (at $7.50 kg which is quite expensive when on a budget) but now they’re totally unavailable. 😩😩😩

@@LetsEatPlants Only the orange ones which I’m not too fond of. Those you used with the red skin and whitish flesh are definitely so good. I’m not sure if it’s a seasonal thing that they’re unavailable. I’m more inclined to think that locals no longer stock them because their price made them unprofitable. Much of the healthier stuff like berries, chia and so forth is very expensive here in Australia. Frozen berries are $6.90 a pound,and the cheapest chia is $12 for 2 pound bag. And neither are these prices the organic versions; they’re dearer still. Housing is hugely expensive too, minimum $350 week for 3 bedroom place, most $400+. And when income is only $700 week, life here is not great for many. Going to have to move location, haha. If only it were that easy. However, by God’s grace we are still better off than many in the world. Thanks for your efforts; been loving your videos.

Yes! Any non-dairy milk should work, but I usually opt for a creamy milk (soy, coconut, some oat milks) as they will give a better final result.

I really love my Cuisinart! I think the main advantage of the Creami is that it does make a perfect-sized smaller portion. 😄😄 I might have to do a side by side with the Cuisinart.... you know, for "science". 😜

Yes! They’re not quite as sweet as when baked, but you can adjust with added sweetener if needed. 🤗🤗

Any alternatives for soy milk? My 1 year old daughter has an egg, soy, tree nut , peanut and wheat allergy😢. Cooking is Sooooooooo hard for her! But i dont want her diet to be extremely limited so I try to make new things & new recipes Often!

No worries! You can use any vegan milk you like. Oat milk seems like it would be ok for her? (There are brands that are certified gluten free!) Coconut milk would work well if she's not allergic because it's very creamy! (Sorry my allergy info is limited. 🙈) And great job making new things for her, she's lucky to have you. 😊

Hi thanks for sharing, but I am confused at 6:42min mark where you indicated let the machine run for 20mins?! But the ice cream machine only has 2switch panel? you screen at 641 shows a bake, boil air fry? I am so confused

Hi there! The ice cream machine needs to churn for about 20 minutes per manufacturer’s directions. (You should follow your ice cream machine’s directions for time to churn.) I just leave it running and set a timer since it only has an on/ off switch on the machine. I used the timer function on my oven to set a 20 minute timer, so the bake, boil, air fry are not being used… they are just other buttons on my oven. Hope that helps! 😊

@@LetsEatPlants Ah I see, its your oven timer!! I have not purchase any machine and currently doing a research on variety of brands. In this part of the world, ice cream machine isn't popular as there are plenty of icy treats available. And we also have lots of independent ice cream cafes that churn local flavours. I love ice cream but am now more keen on healthier options.

@@pjpororo323 Yes oven timer! 😄😄 Oh yes, good to do research first. The one I have was the cheapest model available and it’s honestly perfect. All you really need is a churner, and that’s what it does. The only other one I was considering is the Ninja Creami, but that is really only good for 1 serving at a time, and I prefer to make larger batches in my Cuisinart. If you are looking for healthy treats, you may want to invest in an ice cream maker because homemade with healthy ingredients will always be your best option for that. Good luck!

@@LetsEatPlants Great thank you! I saw the Ninja Creami too, but it has it downside only limited types of fruits can use to blend in the machine, and limited size means not meant for parties unless you get enough pint size to do in advance, good for individual or small family indulgence

Honey actually sweet potatoes hwve more calories then a regular potatoe. So it’s not a low calorie food

Mine takes about 15-20 minutes, sometimes less! You’ll notice it’s done when it’s reached a more ice cream-y consistency. It basically stops churning. 😊

Great suggestions and presentation for a healthy sweet potato based ice cream. My concern is that the ice cream maker is clearly a 1 1/2 quart Cusinart with a simple on/off switch. The video also shows a timer and digital buttons from something that is clearly a heating unit with self-clean; detracts from my trust for your procedure. Just say 20 minutes.

Sorry for any confusion Mark! The first machine you see is a digital scale that I used to measure the sweet potato in grams. The second is my Vitamix blender. But I think what you are referring to (with the digital buttons & self cleaning function) is actually just my oven! I used the timer function on it to set the timer for 20 minutes because that is how long Cuisinart recommends to churn the ice cream for. (You can use any timer you like.) I didn’t know that would detract from the video, please be assured what I used to churn the ice cream was only the Cuisinart. 😊😊

But... maple syrup too sugary and vanilla sugar too ? Ugh dont know.. no oils at least... man so sad my favorite vegan no oil ice cream started adding fkin oils.. my heart vessels are burning.. n i think they just added oils without warning people

Not vanilla sugar, just vanilla extract! 😄😄 You could leave out the maple syrup, or use less if you prefer. Might still be sweet enough since baked sweet potatoes are pretty sweet on their own. 😊 What was your favorite vegan ice cream before they started using oil? 😳
