I use frozen cauliflower and coconut cream. It's quick and easy. Add Stevia to sweeten and sugar-free chocolate chips for a zero-carb ice cream. 🍦 Adding peanut butter and cocoa is delicious, too!

Love it, zucchini! I don't have an ice cream maker, so I usually just pour the liquid into ice cube trays and blend when frozen. Also, I like to add some oats into whatever liquid and let the high speed blender run until it starts to thicken a bit... then cool and freeze. Makes a nice smooth base without the fat.

@@animaltalk1515 A pinch or two of psyllium fiber powder also thickens it up too. I always seem to have psyllium in fridge & been making healthy blender "nice cream" a lot. Organic tofu also works great adding protein and thickening.

My ice cream: pressed cup of spinach, (if I have) frozen banana, cup of mix frozen blueberries with peaches, or raspberries with peaches, 1/2 avocado, 1 tsp vanilla, 1/4 cup of light coconut milk, maple syrup to taste. I process it in Blendtec. I like it soft, but I do put leftovers in freezer.

Thank you and I love you! I finally found a recipe without the need to use egg, cream, coconut milk, cow milk or cheese! I just replace the sugar with keto friendly sugar and I am enjoying ice cream with veggie fiber and fat!!! My toddler said mommy is there more? Again, thank you for a low calorie but nutrient packed ice cream. Now I can enjoy it with less guilt!

I have a whole video comparison planned for it. 😃 The main thing I’ve noticed is that the Creami gives you the “just churned” consistency every time you eat it, vs. the Cuisinart will only have that consistency when you churn it the first time. But there are definitely pros and cons to each machine! Can’t wait to share the vid. 😊

Like that ice-cream idea❣️ I'll be blending frozen, uncooked zucchini or cucumber and tweak with powdered milk and cane juice (sweetener with all the live enzymes). I usually do frozen avocado (and sometimes add a fully ripe frozen banana), spices and I have "pistachio" ice-cream. I don't use an ice-cream maker. Thaaank you!

So glad you enjoyed! I steamed it to reduce the zucchini taste, but i'm sure raw would work as well! 😄😄 It's actually pretty mild tasting even when raw. I haven't done an ice cream with silken tofu yet! I'm intrigued though. Tofu can have an interesting texture when frozen, but I don't have much experience with frozen _silken._ Might be worth an experiment! Thanks for the suggestion. 🤩

Another way is freeze in icecube tray, take out and thaw for 7 min, then put the cubes in a food processor. Pulse to break up the process til it looks like ice cream. Smooth and creamy!

Mint chocolate chip is also my fav. I’m thinking to steam the zucchini then freeze it and mayb add a banana or 2 then use my Vitamix because I don’t have an ice cream maker. Will let you know how it comes out

Yes! Adding the banana will definitely improve the texture for a vitamix version. Might alter the flavor a bit, but hopefully not too much. Less ripe bananas are less “flavorful” than overripe ones so that might be good to use. Yes let me know how it turns out! 🤩🤩

I add 1/4 cup of Veggie Glycerin: 1. for a sweet boost and 2. to keep the ice crystals small and it won't seize up and become too hard.

Hi..great idea for a healthy ice cream! I would like to add that anyone can add GUAR GUM to this mixture in a blender!! Guar gum makes the mixture VERY THICK AND CREAMY as it mixes up in the blender! All u need is 1/2 tsp of guar gum at a time..then blend and watch as it thickens!! Also .why not add unsweetened cocoa powder to your recipe?? This looks delish!!

The churning of the machine (or by hand during the freezing!) helps a lot. But, I have been reading that any homemade ice cream is best eaten within the first few days of making it! Without stabilizers (like guar gum) it tends to get icy because every time we take it out to soften it enough to scoop and then put it back in the freezer, the ice crystals band together and get larger… hope I’m explaining it well! 😂🙈🙈 So I’m experimenting with making smaller batches at a time. For me it hasn’t been a problem since I like my ice cream at a soft consistency when it’s served, but I know not everyone has that preference so I’ve been researching how to prevent iciness. 😆😆 More to come! 😜

If you have a pet rabbit they would have loved that skin of the zucchini. I have colony buns and so when I see stuff like that I cant help but think of how much they would love the scraps (not the avacado if course but when I see people skin zucchini or cucumber etc things like that). Also definitely see if zucchini alone would work that would be awesome. If you try it and dont film it please let us know how it turned out even if bad and why if it is bad. That would make a good video though.

Awww a pet rabbit!? I wish! 🥺🐰🐰💕 Definitely want to try all zucchini! I do think it will work.. it just may be one of those ice creams you need to eat right away because they tend to get icy in the freezer the longer they’re in there (like in the video I posted today!). The more fat in a recipe, the better it does in the freezer it seems! There are also some anti-icing tricks I have to try still .. so might be able to work some of those into that recipe. Lots to experiment with! 😝 Will definitely keep you guys updated! 💕🌱

You are doing a great job for the society❤️ I was a hard core non vegetarian till I visited a farm and witnessed the horror of the dairy industry. The cow is inseminated painfully every 6 months so that calf is born. The calves are taken away immediately without a single drop of milk. The male calves are transported to the slaughterhouse to be killed on the very day. This process continues for some years till the cow is completely exhausted and later sold for meat. That’s the milk we consume. I literally had sleepless nights after watching the cows, their udders become so big they can’t even move. And they run to save their babies from going to the slaughterhouse. Thank you for these recepies so that people can choose compassion in their plate instead of pain.

Yes, I would do just a few leaves to start and taste it. If more is needed you can always add more, but you can’t take away if it’s too much. ☺️☺️

One important consideration for ice-cream ingredients is budget - not everyone can afford coconut milk AND cashews! Zuccihni (aka baby marrow) is good low-cost option for an everyday ice-cream. I haven't seen your sweet potato ice-cream recipe yet - there next. Sugar has quite a big environmental footprint so sweet potato sounds good to add the sweetness. Do you think a zucchini and sweet potato combo might be a good cost-effective option? We can keep the coconut, avo & cashews for special occasion ice-cream... I have seen a choc mousse recipe using avo. Another recipe used oat milk in a custard-type filling (it was heated and then cooled) which acted as a thickener.

I made this, it took a few days with the freezing process. The flavor is delicious, but the consistency was very icy. Next time I would use the whole avocado and probably coconut milk. I will let you know the results.

Good to know how it worked for you! Yes, I do think increasing the fat content will help with that. I've also heard to add a bit of vodka to help reduce the iciness.. or another option would be to churn right before eating (such as with a food processor or Ninja Creami). But let us know how the extra avocado or coconut milk work out. 😊

I haven’t for this recipe, but if you check my channel I have other ice cream recipes without avocado! I’ve used sweet potato as the base before and it works great. Any other “fat” would work here as well in place of avocado, so like coconut milk or blended cashews would be great. 😊
@@FreeWilliams08 I would do some blended cashews (blend with either water or cashew milk) for thickness! Let them soak in hot water for 10 mins. first. I’d use about 1/2 cup for this recipe. But you’ll want them to add some body to the ice cream to make up for the avocado. 😊 I think just plain cashew milk will be too thin.

I wasn't at all thinking it would have a zucchini taste. That avocado was the thing that I'm like nope, don't want to taste that, and also have that ugly color for mint.

You can sub the avocado with cashews or coconut cream. 😊 You could even try extra zucchini but it might turn out a bit icy overall since the water content is so high on them. Baked white sweet potato should work as well as a sub. 😋😋 The green actually partly came from the zucchini! The avocado just intensified it. So just beware that if you use zucchini you might still have a light green color.

As with any recipe that exists in the world, if you don’t like it.. you don’t have to make it! 🤗 This is a great option for people who don’t want a decadent treat (for various reasons) but still want something of a sweet treat. Pretty sure no one has had their dessert life ruined because of it. 🙂🙃
