Hi Ellie. I switched to vegan a few months ago (environmental reasons) and I’m LOVING your Vegan Kitchen book. That’s were I discovered this word “aquafaba”. It’s so great to make use of every single resource given to us and minimise our waste…. For this meringue recipe, does it work for making one big meringue? Are the steps or quantities different? Cooking times? My family has this traditionally at Christmas and I’d love to show them veganism isn’t starving yourself of delicious food 😂 Thanks 😊 Nicole

Hey Nicole. I’ve tried making a large one and it was a total fail haha! I would recommend sticking to the size and cooking instructions in my book :) it’s tricky making meringue from Aquafaba but the result it quite good when you nail it! Have a practice run too 😅 I found making the meringues as close to eating as possible best! 🫶🏼

Crunchy and kinda soft but once all the yoghurt and fruit is on top it’s a mix of creamy and crunchy 👌🏼
