Sharing vegan pineapple upside-down cake recipe!
【Pineapple Upside-down Cake】
(23 x 12 x 8cm pound cake mold)
Ingredients
Cake flour...300g
Baking powder..2 1/2tsp
Baking soda...1/8tsp
Salt...1/4tsp
Beet sugar...100g
Plant-based milk...180ml
Rapeseed oil (or other neutral oil)...100g
Rice vinegar...1Tbps
Pineapple juice (100%)...60ml
Beet sugar (for topping)...60g
Pineapple (thinly sliced)...200g
Oil (for coating the mold)…as needed
How to make
1. Sift through the flour and combine with baking powder, baking soda and salt. Mix well.
2. Combine beet sugar, plant-based milk, neutral oil like rapeseed oil and pineapple juice, and mix well.
3. Combine beet sugar and 40ml water in a pot and cook on a medium heat until it caramelizes.
4. Coat the inside of the mold with oil and place pineapple slices on the bottom. Pour in caramelized sugar.
5. Combine dry and wet ingredients and pour into the mold.
6. Bake in a preheated oven at 180℃ for 50 min. Enjoy with coconut whipped cream or any topping of your liking.

以前、北インド家庭料理の動画にコメントさせていただいた、インド在住の者です。 相変わらずなつきさんのファンで、少しずつ食生活変えていきたいなと。 ちなみに私もインドでは週6でベジタリアン、日本でもほぼ菜食です。とくにインドほど菜食が美味しい国はないな、良い国にいさせてもらっているな、もっと菜食のことが伝わればいいのになぁと思うほどです。 これからも応援しています、そしてベイビーの誕生おめでとうございます❤
