Happy World Vegan Day! For #worldveganday I'm sharing one of my faves. This Vegan Pumpkin Pie tastes and bakes JUST like the classic - you’re going to LOVE this! Made with only 9 ingredients, it’s rich and smooth in texture and filled with flavour! It also just happens to be gluten-free! It is going to be a perfect vegan addition to your holiday baking this year.

-2 cups pumpkin puree (450 grams) -1/2 teaspoon sea salt -1 cup coconut milk from a can (she states in the recipe link that she only uses the 'cream', which when a regular can of coconut milk is refrigerated, the cream is the thick solid portion that separates itself from the liquid. Thai Kitchen sells cans of JUST the coconut cream if you want to go the faster, easier route, though it is a little pricier) -1/2 teaspoon cinnamon -1/2 teaspoon ground ginger -1/2 teaspoon allspice -1/4 cup maple syrup (84 grams) -1/2 cup brown sugar, cane sugar, or coconut sugar (105.3 grams) -1/4 cup corn starch (32 grams, which she recommends sifting in)

Canned coconut milk doesn’t not work as well as canned coconut cream, the cream ( in our location) is the one that separates into liquid and thick cream. Maybe different in other regions

This recipe is awesome. Had to run over to the blog/website bcus I'm saying to myself...no it can't be that simple...but guess what the instructions are clear as day and it is easy enough for the novice baker. Although our ( Canada) Thanksgiving has passed, I'll be making this as a Sunday treat for sure.

Oh wow! I'm so excited to try this recipe out. Your coconut milk looks so thick here. In the past every time I've purchased coconut milk its been much runnier. What are your suggestions? Is there a particular brand/type of canned coconut milk you recommend?

Thanks so much!! You can put the fan in the fridge first - that'll help it to separate and thicken up! Just don't shake the can haha, and then open it and scoop the coconut cream out! I've used Grace and Thai Kitchen, works well with both of them!

I have sugar sensitivity and have to eat sugarless desserts and vegan desserts. Is their recipe a sugarless recipe for pumpkin pie you can recommend? I have date sugar by date lady. Which is sweet enough for me to handle. Is there a way I can substitute the maple syrup and sugar for Date lady liquid sugar or date lady powdered sugar? I really want flavor from spices. Can their be a sugar replacement, that is not super duper sweet?

It's the thick white part from the can of coconut milk (minus the coconut water) that you get from putting it in the fridge overnight and it separating!

Ok I just bought every single ingredient BUT!! I opened the coconut milk and it's only liquid!!! How do you know if it's a solid or em I suppose to blend it? I got the Goya coconut milk in a can. :(

Hey! So you want to store the coconut milk in the fridge overnight - that's how you get the thick white part to separate from the coconut milk!
