I am 72 and when I was a child my Italian Nana made these "signorina" mushrooms like this, but she pressure cooked them 1st for about 10 minutes, then squeezed them out and fried them in olive oil and butter. They were delicious! She would add some of the mushroom broth from the pressure cooker to the frying pan so they made a "gravy" ...These look great too but my Nana's were the best!

1lb of Sweet or Hot Italian sausage, 2 or 3 red or green large bell peppers cut in strips, garlic, pinch hot pepper seeds, olive oil , a large onion, a quart of any wild mushrooms (but these Maitaake make it taste the right way), and 1 28 oz can whole peeled tomatoes squished up with hands. Brown the sausage in some olive oil add garlic and pinch hot peppers seeds, add the tomatoes and mushrooms and cook half hour, remove the sausage and add the peppers and onions and cook till done, add salt pepper to taste and that's it! We serve it with italian crusty bread or rolls. They sell this here in restaurants on Federal Hill, Providence, with the wild mushrooms it goes for 30 bucks for a bowl with some bread and butter! Another good thing if you don't have the wild mushrooms is the canned Chinese oyster mushrooms mixed with straw mushrooms and a little shiitake. It comes out almost as good.
