Yes I've made my own tomato powder. I also like to get dried minced onion flakes, toast them in a dry pan til they darken to my liking, and pour them onto a big plate to stop the cooking. I save some flakes, and grind the rest into powder. It makes a wonderful alternative onion flavor. If you can eat nutritional yeast, you can dry toast it too.

Chef AJ, I sautéed onions today and I didn't use oil. Not even olive oil. I noticed that the onions made a nice sauce when you use water. I put this in with a can of no salt added chili beans w/ sauce and no salt added black beans from Walmart and poured it over brown rice. I added lime juice to the rice for a little brightening. Thanks for the inspiration to take what I thought was cooking healthy and cooking even healthier for weight loss.

I wish there was more recipes that catered or considered those that can't eat nightshades. I have coeliac which I thought was hard as a lot of GF products have egg but the main thing having to be GF is the cost. But that was nothing compared to how hard it is to be nightshade free, almost everything seems to have tomatoes, pepper (not black pepper) spices and potato starch. It would be nice if someone said what you could use as a substitute nightshades with.
@CHEFAJ6 жыл бұрын
There were no nightshades in the ranch dressing.
@socalslk5 жыл бұрын
Nightshades do present a problem. You would have to eliminate the chili powder, tomato powder, and smoked paprika. That would remove the southwest flavor profile. I would use roasted sweet onion and roasted garlic weather fresh or dried to get some flavor depth. If you are trying to replace potato starch, consider arrowroot starch.

Ok I tried it tonight, so exciting! The spice blend smelled sooooo good. I tasted the finished product and added maybe a half tsp more of the onion and garlic powder (my onion was aggressively sweet and maybe should have been cooked longer because the high tang). I added some celery seed to bring it down to earth a little bit ( next time I might try a celery stalk or so. That turned out well, but I had this idea to grind up some dried ahítale mushrooms into powder to help make it a little creamier- about a teaspoon. Guys I can’t wait to try a salad. This is so good!

How long has Kathy been vegan? Why is she obese if she has so many vegan cookbooks? Is she following her own recipes? I hope this question does not offend anyone. I’m not trying to be offensive or humorous. I recently started making healthier food choices and I’m considering becoming a vegan. My goal is to lose 20 lbs and change my eating habits permanently. If she is vegan and is obese, does weight loss as a vegan work for some and not others?
