In this delicious episode, guest chef Kathy Hester demonstrates her delicious Roasted Onion and Garlic Ranch dressing that she contributed to my new book The Secrets To Ultimate Weight Loss which you'll find on page 230.

ROASTED ONION AND GARLIC RANCH DRESSING
Thank you, Kathy Hester, author of The Ultimate Vegan Cookbook for Your Instant Pot and Vegan Cooking in Your Air Fryer, for creating this unbelievably delicious recipe just for my book. The first time I made it I practically drank the entire recipe! I am forever grateful and in awe of your talent. Here is what Kathy had to say about the culinary challenge I gave her: Chef AJ asked me to make an SOS ranch dressing and, of course, I said yes. I love being a mad scientist in the kitchen and helping people eat flavorful food that fits into their diet. The base of this dressing is pureed roasted onion and garlic. It’s surprising, but their flavors mellow out so much that you still need to add in a little onion powder and granulated garlic to give it the right bite. Enjoy this on salads, baked potatoes, and as a fun topping on steamed veggies.
INGREDIENTS:
1 medium sweet onion (will make about 1 cup roasted onion)
1 small head garlic (will make about 1 tablespoon roasted)
½ cup plain unsweetened nondairy milk
1 tablespoon apple cider vinegar
1 ½ teaspoon dried dill (or 1 tablespoon fresh dill)
1 teaspoon dried basil (or 2 teaspoons fresh basil)
¼ teaspoon granulated garlic
¼ teaspoon onion powder
⅛ teaspoon ground black pepper
PREPARATION:
First you are going to roast the onion. Place the whole unpeeled onion on a baking sheet covered in parchment paper to make clean-up easier. Place in a 400-degree oven for 25 minutes and if it isn’t soft in the middle, cook for another 25 minutes. (If you have an air fryer, cook for 30 minutes at 400 degrees, check and cook another 20 if it’s not soft.)
Cut off the top third of a small whole head of garlic and wrap the remaining ⅔ whole in foil or place in a small covered baking dish. Place in a 400-degree oven for 30 minutes. (If you have an air fryer cook for 30 minutes at 400 degrees, check and cook another 10 minutes if it’s not soft.)
Once the onion and garlic have cooled; remove the outer peel layers of the onion, cut in chunks and add to your small blender or food processor. Blend until smooth. At this point, it will look a little like applesauce.
Squeeze the cloves of garlic out and add them to the onion and puree again. Then, add in the plain unsweetened nondairy milk, apple cider vinegar, dill, basil, granulated garlic, onion powder, and black pepper. Blend until smooth.
She also demonstrates her amazing bouillon recipe from her Instant Pot cookbook and her air fryer cauliflower wings with homemade BBQ spice from her Vegan Air Fryer book.

Yes I've made my own tomato powder. I also like to get dried minced onion flakes, toast them in a dry pan til they darken to my liking, and pour them onto a big plate to stop the cooking. I save some flakes, and grind the rest into powder. It makes a wonderful alternative onion flavor. If you can eat nutritional yeast, you can dry toast it too.

I wish there was more recipes that catered or considered those that can't eat nightshades. I have coeliac which I thought was hard as a lot of GF products have egg but the main thing having to be GF is the cost. But that was nothing compared to how hard it is to be nightshade free, almost everything seems to have tomatoes, pepper (not black pepper) spices and potato starch. It would be nice if someone said what you could use as a substitute nightshades with.
@CHEFAJ
@CHEFAJ 6 жыл бұрын
There were no nightshades in the ranch dressing.
@socalslk
@socalslk 5 жыл бұрын
Nightshades do present a problem. You would have to eliminate the chili powder, tomato powder, and smoked paprika. That would remove the southwest flavor profile. I would use roasted sweet onion and roasted garlic weather fresh or dried to get some flavor depth. If you are trying to replace potato starch, consider arrowroot starch.

Chef AJ, I sautéed onions today and I didn't use oil. Not even olive oil. I noticed that the onions made a nice sauce when you use water. I put this in with a can of no salt added chili beans w/ sauce and no salt added black beans from Walmart and poured it over brown rice. I added lime juice to the rice for a little brightening. Thanks for the inspiration to take what I thought was cooking healthy and cooking even healthier for weight loss.

How long has Kathy been vegan? Why is she obese if she has so many vegan cookbooks? Is she following her own recipes? I hope this question does not offend anyone. I’m not trying to be offensive or humorous. I recently started making healthier food choices and I’m considering becoming a vegan. My goal is to lose 20 lbs and change my eating habits permanently. If she is vegan and is obese, does weight loss as a vegan work for some and not others?

I would love to see a banana done in the air fryer! But thank-you for this wonderful ranch recipe, I am going to try making it this weekend. One of the things i miss the most is dips and sauces, since going vegan. I only know how to make peanut sauce, but that is too rich for weight loss.

Ok I tried it tonight, so exciting! The spice blend smelled sooooo good. I tasted the finished product and added maybe a half tsp more of the onion and garlic powder (my onion was aggressively sweet and maybe should have been cooked longer because the high tang). I added some celery seed to bring it down to earth a little bit ( next time I might try a celery stalk or so. That turned out well, but I had this idea to grind up some dried ahítale mushrooms into powder to help make it a little creamier- about a teaspoon. Guys I can’t wait to try a salad. This is so good!

*shitake. I accidentally mummified some by leaving them in my fridge too long. Very happy accident to have dehydrated mushrooms!

The recipes looks great. I just wish the video and audio quality were better and that the Kathy Hester name banner did not cover the food preparation area. Chef AJ's voice was about 4 times as loud as Kathy's; I'd turn up the sound to hear Kathy and get my eardrums blasted when Chef AJ came on.

They addressed the fact you don't have to be a vegan chef to make GREAT vegan food. Same goes for thin vs heavy. She has great food recipe ideas. Your loss 💔
