Dolly P yeh I have the flu and I wanted some warm soup, I went to the grocery store and couldn’t find any ready made vegan friendly soup, all the other options were in a can. I went home and threw some things and made a delicious vegan ramen.

For added flavor use a vegetable consomme, but leave out the salt because the consomme is high in that.Negate the apple cider vinegar and lime and throw in 1 or two tablespoons of vegan mayo to taste.Throw in some frozen peas and carrots and you got a ridiculously serious yummy perfection. Thank you, Lauren, for giving me this idea.

Hey Lauren! I am from Canada also and just would like to know what brand of tofu you use for this. Thank you! This is my mom and myself favourite dip and this seems like such a cheap way to make it rather then using cashews or the processed vegan products. My mom is not a vegan but I would love to make this and try it out and see how she likes it! Your recipes always look so amazing. Dear Lauren, When I cook vegan food to share (whether it is your recipe or not), I tell them that it IS VEGAN. I challenge them to try it. And a good 75% of the time, they do not believe me. Meat-eaters appreciate vegan food too. I believe we do not have to “trick” them. 🙂🙂🙂

Daniela de la Fuente I think Lauren made it pretty clear that you want no excess water in this at all, hence the squeezing out of the tofu, and making sure the spinach was as dry as poss. Therefore silken tofu might be too wet and dip would might not be bit as rich and unctuous (my new fave word...!) In Lauren, I trust :)

Unctous! As a non-native this is a completely new word. Yeah I think you're most proably right, but regular tofu is just not as cheap and easy to find where I live as silken tofu is. :D
