SWEET POTATO MUFFINS
These light and fluffy vegan sweet potato muffins break the stereotype that baked goods, that are good for you, just can't exist in the same universe. Gluten-free, refined sugar-free, even oil-free and yet these muffins are absolutely delicious and satisfy the way only a baked good can. This is one of those recipes that I managed to get right the first time I attempted it and has become a regular in our kitchen ever since. These sweet potato muffins can be enjoyed for breakfast, a mid-day snack, or dessert after dinner!

I just made these muffins for the 2nd time! The recipe is wonderful! This time I added 1/4 an apple (diced small) and a handful of raisins and 1/4 cup unsweetened apple sauce - THEY ARE SO GOOD!! Thank you Jill for giving me these recipes to make and get creative if I want to - Amazing!!

Just made these this morning, and I LOVE them! Can't wait to see if my toddler grandbabies will eat them. Trying to help get my family to eat more plant based. WFPB eating has LITERALLY saved my husband's life, and we are only almost four months in and we have both lost about 30 pounds eating awesome stuff like this.

I have these in the oven right now for my family! I used 1 1/2 cup Oats and 1/2 cup ground Quinoa. I just ground the Oats and Quinoa together in my blender, then made the rest of the recipe. ... the batter looks amazing - can't wait to see them come out of the oven. :)

I know that almond flavor isn't found in many recipes but when one calls for vanilla, I instantly just think almond; it's a flavor that makes me think whatever I'm making -- or tasting -- is extra special.

I made these muffins after watching your show yesterday. I was impressed at how easy they were to put together with things I already had at home. Because I live alone, and in California where it's so hot oh, I don't like to use the oven during the summer especially oh, so I thought I'd try them in my ninja cooker. Because my muffin pan doesn't fit in the cooker, I just doubled up on the muffin paper cups and set them inside. The cooker remind you to lower the temperature, and not cook them as long. I set the temperature at 300 and cook them for 16 minutes. I tested them with a toothpick for doneness, and they are absolutely wonderful. I encourage you to try them out in your cooker. Made these today! I grind my own wheat, so I used half wheat and half oat flour... and due to allergies, I used Applesauce in place of the sweet potato. And it WORKED beautifully!!! This is such a versatile recipe! Thank you Jill.

Thanks Jill for this recipe and the tip about not all oats are gluten free. I’m not usually a fan of sweet potatoes but I’m going to give this a try because these muffins look really good. 😍😃

I whipped these up and sent them with my husband who is visiting my two sons in college. I got a text from my boys raving about the muffins. So, I haven't tried them yet, but they got great reviews from my husband and sons. Also, I only used half a cup of dates because that's all I had left which apparently made them sweet enough for my gang.

This recipe is exceptional. The sweetness level is perfect. I may have helped it along by using red garnet yams, and by adding raisins, walnuts, and a small dose of chocolate chips. And the 25 minute bake time worked even though my non-stick muffin pan makes 6 large rather than 12 small muffins. I may need addiction counseling to control my consumption of these.

Yum! Those look delicious. I have all of the ingredients including already baked sweet potatoes so I am making these this afternoon. I'm thinking I may add a few raisins. These are yummy! I made a few plain muffins (OMG!), Made a few with raisins & walnuts and a few in English muffin rings. I made the sausage patties and loved them, so I made a giant batch for the freezer. Easy hand held car breakfast!! Jill, girl, you are the best!!!

Love it. You amaze me. I stopped using oil but still didn’t know how to make baked goods soft without oil. It’s like you are adding more nutrition when you replace oil. Just like when I replaced meat with hearty veggies. I got more out of it.

Made them today! I'm at altitude (like 7300 ft) and made no adjustments, think it worked well. I DID add a WHOLE medium granny smith apple dices small and a handful of pecan, and I think the apple caused it to need more cooking time, it was moister... And damn, these are GOOD. made 12 1/4-cup scoop muffins, and about another cup baked very well in a 4" spring-form (I did grease-and-flour that - and NO stickage, I like in the paper cups). Thank you!

yummm - I wish I had a blender that could handle blending dates; I would have to leave them in hot water for a good while before doing so

Susan Dee have you looked at a Ninja high speed blender? They are much less expensive and I am pleased with the performance in blending dates and nuts.

Bite the bullet and buy a Blendtec or Vitamix. They cost more initially but will last a decade or more and they’re awesome.

Thank you so much, Jill. These were absolutely amazing! My husband and I just kept saying, “Wow!!”. I also added a little cardamom, nutmeg and saffron to mine. Thank you for going to so much trouble to work out such a wonderful texture! We are just going into Winter here in Australia, and I can’t wait to make many batches of these warm, delicious goodies!

I made these again, except this time, I added 1/4 cup Cocoa Powder to make Chocolate Muffins!!! Then I dipped the tops into your Cinnamon Roll glaze - so yummy!

I haven't tried substituting the oat flour but I think rice flour would work. You can soak the dates in hot water for about 30 minutes before blending and they will blend up nicely in a regular blender.

I made these today - but instead of Sweet Potato, I used my heirloom "Long Island Cheese" Pumpkin! I added Pumpkin Spice so, my Hubby will have Pumpkin Spice Muffins.

Hi Jill, everything you make is and looks delish. Ty. So many recipes call for oats. From you and others I watch. Any other subs that coukd work? I've tried grinding quinoa flakes to a flour. It is ok but they seem dryer and quinoa does have a bolder flavor. Also, do you use a FP? I see your blender often. I use my Vitamix over 30 years. But am in need if a new FP. Too many to choose from and I'd prefer not, a cuisinart. Thx for all you do. ❤

I believe rice flour would work instead because it has such a neutral flavor, just like oats. I do have a food processor but it is a 12 cup Cuisinart. I would say that is is just OK, not great. Wish I new a good one that I could suggest. Sorry

Hi .. me again ... this is another recipe I LOVE along with your Chocolate chocolate chip cookies ... I also found out I was HIGHLY SENSITIVE to flax seed, so can I just leave this out of this muffin recipe and the cookie recipe?

I mostly bake with buckwheat , so I’ll be giving these a go with buckwheat not oats. I think it will work out because vegan buckwheat pancakes work out amazing every time😀

Nancy Huenergardt hi Nancy, I did end up making this recipe with buckwheat. I used buckwheat flour (2 cups ), & your right I should have adjusted it , but I didn’t (I forgot), I just added a little extra water. Just eye bawled it ( not sure how much water I added. Came out great, didn’t rise much, but texture was very fluffy .

The frosting from my hummingbird cake would be delicious plantbasedcookingshow.com/2020/06/20/vegan-hummingbird-cake/ I don’t do calorie counts for my recipes. You could mix it in a food processor but I would probably soak the dates for 20 minutes first 👍

Hi .. I love your recipes!! I am a huge fan. I'm having an issue I hope you can shed some light upon as I don't normally bake. I am making these muffins and had to cook them over an hour ... and they are still mushy in the middle, although the outside is quite done. I am using a silicone muffin pan and I was wondering it that had something to do with it? Thanks for your help.

I don’t think it is the silicone pan. My best guess is that you may have blended the oats too fine. You still want them to be a bit grainy, not fine like white or wheat flour.

Looks great but I’m concerned about the calories. A cup of dates by themself are over 500 calories. Is there something that can be substituted for the dates?

You could try applesauce but then I would use a little less soy milk.

This looks great but I’m worried about the amount of even natural sugar from the dates. If I wanted to reduce the amount of dates by half, would I reduce the liquid in the recipe?

A mix of almond flour and arrowroot flour may work but they will be pretty heavy
