Could you just roll out a huge sheet of pasta dough and cut circles with a glass? Rolling each tortellini by hand seems painstaking.

its just the technique to get them very thin and perfectly round. Good luck rolling out the whole sheet of dough as thin as you need it to be for this. In contrast my pierogi dough is done this way but that's because its supposed to be thicker/doughier

Actually tortellini are made with squares of pasta and, yes, you roll out a sheet of pasta and cut them very quickly. Usually we use the pasta machine (the simple, manual one) or the rolling pin, longer than the one in this video. The flavor is the same...of course😂but squares are easier. This recipe looks delicious, now I'm hungry again....🙄

@@hotforfood pasta machine (27$) does a fine job in half the time and use a circle cutter or square to get perfect circles/squares - I've made hundreds of these for caterings/restaurants.

Lauren, I purchased Vegan Comfort Classics in the spiral edition also, since it is lays down easier in the kitchen. It is the most beautiful cookbook, the photos are ‘the best’ and there are your photos, too! Your recipes do not disappoint, either. The Filet-o-Tempeh sandwich was so fun to fry and that crunch when you bite was epic! I am a vegetarian, but I appreciate being able to leave out the eggs, which dominates our culture. Sorry that I missed hearing your Manifest Yourself. Your photo did look like badass Lauren, who we’ve all come to love.

This is a JiaoZi-tellini recipe! The filling resemble tortellini but the pasta making process is the chinese JiaoZi method. Fusion cuisine!
