I've been making Loving it Vegan's Tofu Feta and I've been really enjoying it. Not sure it would fool anyone but it squooshes really nice onto greens (like an avocado would) and the flavor is so nice that I don't have to put any dressing on it. I usually like Rainbow Plant Life recipes , might try this one.

I use her recipe. I do not use the nooch, and add a pinch of lactic acid, and brine from jar of kalamta olives. Delish!

Did you turn the jar upside down half way thru in the refrigerator ? Therefore the "top" pieces of tofu get marinated equally...? Much love 💞

I never liked feta much, but I think it would have an onion flavor like asafetida powder or onion and maybe some fennel. It is a weird taste, but that make get the Italian kind of edge off it.
