if you're looking for something fun and easy (if a little messy) to try, here's one. last weekend, i made tofu wrapped tofu: the firmest tofu i could get sliced into quarters (fillets) and yuba (tofu skins)...mix olive oil with the seasoning profile of your preference (i used t'giving seasonings like sage, thyme, rosemary, marjoram, tarragon, etc plus onion powder, garlic powder, and s&p)...dip the fillet into the seasoned oil to coat it...wrap the fillet in the yuba (two sheets are good for two blocks of tofu, and my yuba comes in two-sheet packages)...then dip the wrapped tofu in the oil mixture to coat the outside...then bake at 350 F...in my convection toaster oven, 20 minutes each side. next time i try this, i might season the oil with italian herbs and spices, including raw garlic, basil, oregano, onion-and-garlic powders, s&p) and make an outside coating (after dipping the yuba-wrapped fillet back in the seasoned oil) of italian seasoned GF bread crumbs.... i've done italian breaded tofu but never with the yba before because this was only my second time working with yuba. i'm betting it's going to be fabulous, but i need someone to cook for and not just li'l ol' me....
