I usually mince the raw garlic with tamarind and soaked kashmiri chilli as a paste and then complete with the tempering. I do this as I prefer garlic in paste form and also offers me better shelf life.

Chef, I'm going to try this in two varieties. 1 batch like how you made, another by slow baking the garlic in an aluminium foil. I'm hoping that the garlic cooking in its own water will server to a longer shelf life.

@@vijaybhaskar5333 garlic in microwave for 1-2 mns cooks nice and becomes very soft . I normally use microwave 45 seconds to peel its skin. I think microwave in good option because it cooks without much water and soft too 😊

@@vijaybhaskar5333 Slow baked at 150 dec C for 1 hour with convection fan. The garlic was soft and juicy. So I warmed 1.5L olive oil with dry spices (pepper, oregano leaves, rosemary) and have kept them under that oil for 4 months now. Super loving it. I did a batch of 1 kg peeled garlic and am using 1 clove or just the oil depending on the dish. For my Idli chutney podi, I'm using 1 tsp of this oil + 1 tsp coconut oil to lightly roast bedige chilli. Happy life. Wish you the same.

If we add hot oil to chilli powder da colour of da pickle turns to light black,instead of adding hot oil it may be cool nd added then da colour of chilli remains same.

You shouldn't heat it too much... also, hot oil is necessary to cook all powders and remove the raw smells.
