要点： 1、要开水烫面三分之一，面要尽量软 2、面擀成薄片后，要先撒盐，抹匀，再抹油，再撒干面粉，顺序不要搞混 3、先热锅，后放饼，饼鼓起来即可反面，全程中小火 4、擀面过程中回缩厉害，就醒面几分钟后再擀

我會把部分海鹽加進面粉，余均灑在攤開的薄面胚上再用撖面杖輕輕在上面滾過。熟油（煎炸過紅蔥頭，蔥蒜後的油)澆滴胚上，再四角對貼沾勻，喜歡的話還可灑少許五香粉)。灑生面粉或掃滾油燙面粉所得的油酥於胚都為了起酥層，卷細密些層次更多。烙餅多用中小火，勤移讓受熱均勻。濕手搽胚底面再貼上熱鍋，更快更易拱出汽泡，用鏟向周邊輕壓，翻面⋯⋯再翻面，出鍋。用乾淨厚織布鬆裹放入編織籃中保溫保潤或即吃都是辛勞後的獎賞。 說起家常烙餅，我12歲小閨密讓我佩服得五體投地：四十分鐘內拖好地，洗了全家三口的衫，煮好一大煱稀飯，烙了非常鬆軟美味的豬油葱花餅（她把餅胚貼在扣在蜂窩煤爐上的帶許多圓孔，象頂毡帽的瓦甑上，她自信地利用開關爐門或厚鐵蓋熟練的掌控熱力。我看呆了。）晚上七時，她的父母一進家門，她馬上架鍋炒了一大碟青椒炒土豆片，調料只是生抽，鹽，和黑醋(最後放）。那是我記憶中最好吃的炒土豆片。我再復製，也只及她的80%.她拿揑鹽的份量和火候是天才。青椒小辣，土豆片脆而不生，味道香鮮平衡。她和她父母都是誠懇，善良，和能幹的人。
