Rudy L. The meat that you get at the store does not have blood. The red juice is water and a mixture of a protein called myoglobin, and that protein is what gives it the red color that resembles blood. I understand washing meat that you hunted/killed but it seems pointless to wash the store bought. Specially when cooking it does a better job at removing impurities. I hope I don’t come off as rude, I just wanted to talk about it since there’s so many people horrified at it in the comments and it doesn’t make sense to me. I personally don’t care if the meat is washed or not, as long as it’s season good ! (:

Not just salt and pepper-, but ingredients like vet-sin, white pepper, black pepper, five spice powder, garlic and onion powder, fresh seasonings like hot peppers, chive, ginger, onion, garlic, dried spices like star anise, goji berries, pine nuts & sauces & oils like peanut oil, sesame oil, soy sauce, oyster sauce, hoisin sauce, chili oil and Chinese cooking wine also. Anyhow we are also from the Caribbean and yes we season until the ancestors say it is good and we wash all veggies and meat with citrus and vinegar even flour and rum.

Wash fruit and vegetables because they are filthy, but washing meat is not very hygienic( especially chicken because bacteria in chicken isn't only on the surface but in the muscle fibers). If you wash it in the sink the sprayer can create droplets that transfer germs to other surfaces. It's basically the culinary equivalent of flushing the toilet with the lid open.

In my European cultures (Tatar and Sicilian) we don’t use a ton of spices but a lot of aromatics like tonnsssss of herbs, garlic, onion, seeds and nuts and simple seasonings like coriander powder, paprika, black pepper, dried dill and sesame etc for the Tatar side. On the Sicilian side it’s again mostly herbs, fresh ingredients, onion, garlic and aromatics.

Years ago, my mom knew a man who was probably in his late 70s to early 80s, who was telling my mom that his wife was very sick. She had cancer and wouldn't eat anything except for boxed or bagged snacks, and sometimes luncheon meat sandwiches, or what someone else would bring that was cooked. My mom asked if he knew how to cook, and he said "Not really, she always cooked". My mom wrote down some recipes, which wasn't easy when it came to the amount of seasonings, because she was one of those black moms who didn't measure seasonings, but the food was great. She told him to taste as he went along, and not to put the same spoon back into the dish. Germs! Anyway, when she told him to let the greens soak in salt water for a while before the first of several washes, he asked what she meant by soak and wash". Quite surprised, she explained, and he said he didn't know that people washed greens. My mom almost fell over. She told him that if he's not washing them, he's cooking the dirt, germs, bugs, worms, gravel and anything else on them, and that's probably why his wife wasn't eating. Mom was afraid to ask, but did ask if he washed the meats. Nope, he didn't. His poor wife! My mom said to me "Can you imagine him cooking chitlins/chitterlings?" The though nearly made us both barf. My mom started sending plates of food for the both of them.

I will just copy and paste my comment from a different section. when chicken is washed, it’s in a designated bowl of water with lemon and/or vinegar. The bowl is in the sink. Not much splashing but if it splashes it’s in the sink. Then the area is cleaned well after with antibac. The chicken or any other meat is not just held under running water. Its a process. It’s to remove fat, blood, etc. Then it’s seasoned. I take back my “🤮” lol. We just have different ways of doing things lol.

Kim Smith People do not use just water to wash their meat. It’s usually a vinegar/lime or lemon juice solution. It’s not only the bacteria but also the gaminess in the meat we try to get rid of. Secondly, meat is usually washed in a designated bowl in a sink. Then the bowl and sink is thoroughly cleaned with bleach afterward. Do you wash your veggies before you cook them? It’s the same thing here.

I grew up in a household in which washing meat was done (by Mama) and encouraged (by Mama), but it wasn't absolutely essential to life as an omnivore, as so many black and brown people in the video and comment section are making it out to be. I've not washed my meat (heh) once since I left home at 17 years old, and here I am, twenty-three years later, fairly healthy and uninfected by rascally meat horrors. I'm all for passing down generational life hacks, but more than likely, the truth is that African Americans washing meat came into being a result of our ancestors having no choice but to wash meat tossed into dirt or muck or mud by cruel, narcissistic slave owners. It was essential, then. Now? We're all eating the same abused, traumatized, diseased, over-medicated meat, which means washing does nothing but eat up PRECIOUS eating time. Har. Lavender Jack...Swooping On Down.

So basically the racialized economic privilege of the non black folks means they have had access to better quality meat (usually because they were intentionally giving exclusive access to cleaner meat to the white and wealthy) . The use of herbs and certain flavorful food for health and digestion has a long history in African and south east Asian countries.

This is extremely untrue. All meat goes through the same type of grading process. You choose which type of meat you want and if you don’t want to buy grade A chicken that’s on you. Grade D chicken isn’t bad it has feathers and is fattier and tends to have rips in the skin but it’s still the same chicken from the same place just graded differently. You pay more for better grades of meats that’s just how it is. Same with everything else you could possibly buy. But most restaurants use choice meat because it’s cheap and you have a higher profit margin from it. You just have to cook it right. You don’t have to go to Whole Foods to get good chicken or meat. All meat is good you just have to cook it properly and if you get a lower graded one then you should cook it appropriately which I don’t think a lot of people do. I do understand that there is a shortage of grocery stores in general in these types of communities but they all have the same meats shipped to Walmart or whole foods or Trader Joe’s or Jewel or Meijer or Safeway or wherever. It’s usually all from one or two distributors in your area. But it’s all from the same place.
