Chef Varun always has some of the best recipes, and I love the details he shares. I always oversoak my daal, so I am glad he said that it's a maximum of 2 hours of soaking and why we need to soak that much.

In bengali we call this fulury and its very common in local snack shops. We make this fulury with besan or matar/chana daal paste.

There is nothing called Victoria Vada in Kolkata. Name anything ! Hahhh Vendors from other states sale foods infront of Victoria Memorial Hall entrance, naming anything that attracts tourists!? But the name is not authentic.

Vadas look good. But these are not Victoria wadas. Those are puffed up like little puries. Hollow in the Center
