Hoi An is my grandfather's hometown and I love this place. I've been there couple times and always love to eat Mi Quang from those street vendors, nothing in the restaurant can compare. My relative also own a restaurant on Bach Dang street (I don't remember the name sorry lol). Have fun!

I mainly eat at five star hotels in Vietnam. My idea is that the Vietnamese chefs are masters of Vietnamese dishes. I agree with you that they may make dishes more suitable to Western tastes. I did eat food from street vendors in SaiGon but ended up with a severe stomach ache. I don't think the dishes were properly cleaned. So, I never eat food while sitting on the sidewalk. Like they say, "once burned..."

Kyle, I had a roommate from Danang and the mi quang that he cooked had a lot of fat and the meat were sliced bigger. At my favorite restuarant here in Beaverton, Oregon, it is a lot healthier. It is like eating pho, no two restuarants cook alike.

You are doing a good job, In my opinion, You should find out the details, the ingredient, the best you can ,, what go into the dish , how to eat it , . what the sauce is for ,( this was the reason why your Mi Quang was salty, you don't need a lot of it )ask the sellers," investigate" If you are the food guru tell us WHAT ARE IN THE DISH, or learn from others you tube how to host a show.Thanks for sharing
