That's the whole reason they cut it...the information relayed in the scene regarding Vilgefortz's backstory is from the next book that they're going to adapt in season 3. They said it could potentially make it possible for new fans to guess Vilgefortz is the villain

They just released this one deleted scene at the witcher unlocked event, I don't think there's plans to release anymore

No. Heavy SPOILERS It’s is likely he’ll die during the coup at the end of the next season. As he only appears in the first short story and only has mentions after that.
