100 gr. Fine Sugar
1 tsp. Baking Powder
1/2 tsp. Salt
180 gr. Whole/Full Milk
120 gr. Oil
7 Eggs Yolks (eggs that weight 58-60 gr. each with shell)
1 tbsp. Violet Essence
Food Colouring
7 Eggs Whites (eggs that weight 58-60 gr. each with shell)
2 tsp. White Vinegar (optional)
100 gr. Fine Sugar

This chiffon recipe, I skipped the white vinegar in the egg whites just to show you the different. The cake turns out to be all right. So you can choose to add the vinegar or without. If you feel uncertain, just add 2 tsp. white vinegar, or replace it with cream of tartar. Happy baking.

Wanna try this recipe soon but I think it's hard for me to get violet essence in my country.. Btw I never add vinegar in egg whites and it works

Hey Michael. Just wanted to say your JCC recipe worked out brilliantly and will be my go-to recipe for whenever I feel like eating JCC. Only difference is my oven has a fan and it still worked out great and jiggly. Thank you! PS - Next up will be one of these gorgeous Chiffon Cakes!

Hi 👋 Michael, can I ask why you use plain flour here rather than cake flour? And also my oven is a fan oven, at the first stage, do I need to lower 20 degree and bake the same amount of time? Thank you!

If you have ever made an angle food cake think of it this way. All those egg yolks you did not use in that angle food cake go into the chiffon cake batter. both the angle and the chiffon use the whites. I personally do not like making the angle food cake due to the eggs yolks are not used. I am not saying I never make angle food cake but I have been making the Chiffon cake for some time now due to this whole planet earth stop spinning thing or Covid19 thing. Either or. I will say this when I did work in the bakery industry on the east coast of America we did sell them faster then all the other cakes and YES they were more expensive. We also used the chiffon cake as a wedding cake top for the bride and groom.

I always concern about the amount of eggs you put in your recipe when I try one of your recipe I always add lot of vanilla so it covers the smell of the eggs .

Hi Mike my husband visits Singapore twice a year do you have a bakery I only know Bangawan Solo there pandas cake ok bu no cigar by ant chance sells you produce it looks delicious he moistures important thing about cake is moist most commercial you need to drink a lot of water or you will chock because it's too dry.
