Since Conoe did ask. It’s traditional to boil the pre-baked bagels in a lye bath. It creates a glossy finish and actually hardens the outside of the bagel. It’s slightly dangerous to do but generally makes for a superior texture and flavored bagel 🥯

Baked baking soda approximates the effects of lye, but is less dangerous on the skin. It's still caustic, of course. (Baking soda for a couple of hours in a 350 degrees F oven, on a baking sheet lined with foil. Cool, then set aside. Lasts as long as kept dry in a container.)

Black and white cookies were popular at the turn of the 20th century on the east coast (Boston, New York, Florida). Cookies with cake bases and half white half black desserts were in vogue. It's credited to Glaser's Bake Shop in Manhattan by Bavarian immigrants. It became popular with the Jewish and Italian communities after WWII and became a fixture in most new york bakeries. Seinfeld ran an episode where they called it a metaphor for racial unity. Barrack Obama famously bought a couple when campaigning in 08 and called it a "unity cookie."

Lots of people are mentioning Amerikaner cookies in Germany. Their popularity in Germany doesn't explain why he's finding them at bagel places in Manhattan. Black and white cookies were introduced to NY at a place called Glaser's Bake Shop in Manhattan, which was started by immigrants from Bavaria in the early 1900s. The reason you find them at a lot of bagel places is because they almost immediately became extremely popular at Jewish delis. Bagels as we know them today were brought to NY by Jewish immigrants and made famous at Jewish delis, so the connection remains to this day, even at "bagel places" (vs. delis with a fuller spectrum of Jewish fare).

The boiling process makes them shiny and is required for a soft and chewy outside. It also keeps them from burning in the oven so they can bake longer and they will be fluffier on the inside :)

Almost every bakery sells them here and i've also made them myself several times. The funny part about it is that we call them "Amerikaner" ("Americans") here. 🤣😋 Love your content! the black and white cookie is something we have in all German bakeries. Here it is called Amerikaner (american). But the dough is not at all comparable to a cookie dough. It is much softer and we often only have the icing version.

Homemade looks the best, however a small amount of barley malt is suppose to go into the boiling water. The second one I was drooling for though. Hot bagels! Yum! The black and white (aka half-moon) cookies are traditional in Jewish bakeries. They're in the bagel shop to make you think that the bagels are also made in a traditional way. Seinfeld Shmeinfeld. I'm not sure that the cookies themselves are anything like the ones I grew up with. Bagels are supposed to be boiled, and I think some bakeries use steam in the oven like in a French bakery. Outside of New York city, people have to add baking soda to the boiling water to make it hard water like New York water.

@@RuthieAA So, b&w cookies originated in Manhattan, they have a fondant icing and a shortbread base. Halfmoon cookies are from Utica NY, they have frosting and a cake base so overall more moist. Black and white cookies came before halfmoon so halfmoon is the localized rendition of the b&w. :) They look very similar, I just love half moon cookies so much more so I probably care a little too much about this distinction Pftt

3:41 in Germany those things are called „amerikaner" (funny enough that apparently those things aren't even known in America 😄) And it's not a cookie. It's a fluffy pie with a sugar- and chocolate glaze. It really depends on the bakery but if baked well, it's absolutely delicious. I love them! As far as I'm concerned you put vanilla pudding powder in the dough and that gives the cake an interesting but really enjoyable flavour of vanilla and consistency. It's kinda fluffy but also really dense. Also you form the dough into a ball and place it on a baking tray, that's why it's so flat on the one side but so round on the other.

Care for sharing your story about that horrible summer? A couple of years back, I think I had a similar experience. On the back of a terrible breakup, working a boring and unfulfilling job, I spent the majority of an exhaustingly hot summer in the city, mainly because I couldn't afford going on holiday. I was stressed out, depressed, couldn't sleep properly, and the only things that sustained me were going out for sunbathing in the local park after work, getting pho in the neighborhood, and eating frozen fruit juice pops out of the fridge (sometimes at night, as it was so hot in that flat, without air conditioning).

@@whynotnofi8278 That organization is a workers group... literally starbucks workers... who make efforts to unionize starbucks employees against starbucks horrible treatment. Also they had been using the name "Starbucks" before, and Starbucks only took such action against them for this after the group made a statement of solidarity with Palestine. It's quite clear the reasons but go ahead and believe it's just copyright infringement and simp for a corp lollll Almost every news source will call it a union so maybe you should do some research?
