麵團:
中筋麵粉600克(5杯)
(或高筋麵粉)
蛋清2個(約70克)
牛奶200克(1杯)
水130克(1/2杯+2大勺)
酵母8克 (2小勺)
食用油75克 (5大勺)
白糖60克 (4大勺)
鹽6克(1小勺)
夾層:
無鹽黃油(軟化)100克(7大勺)
表面:
蛋黃2個
白芝麻
烘烤
預熱烤箱15分鐘
180°C
26分鐘
Recipe:
Bread✖️12
Dough:
All-purpose flour 600g(5 cup)
(or bread flour )
Egg whites ✖️2(70g+-)
Milk 200g(1 cup)
Water 130g(1/2cup +2 tbsp)
Instant Yeast 8g(2 tsp)
Cooking Oil 75g (5 tbsp)
Sugar 60g(4 tbsp)
Salt 6g(1 tsp)
Filling :
Unsalted Butter (softened )100g(7 tbsp)
Surface :
Yolk ✖️2
White sesame
Bake
Preheat oven 15 minutes
180°C
26 minutes

Anks for sharing Ali, ages ago you did sharing a recipe some sort like this, I tried but didn't turn out good, if I try, I must use Bread Flour as only bread flour will rise taller and not grow side way.

Hi, thank you for supporting and liking my recipe as always🥰🥰❤️❤️ actually the flours doesn’t affect that much, although the bread flour will raise a little bit taller but it doesn’t affect the final outcome a lot 💐💐 it’s the yeast that helps fermentation, you could probably store that in the freezer while sealed properly, so it’s function could be better❤️❤️🥰🥰🥰

阿栗姐姐你好,好开心看到你的面包视频,我想请教你一个问题,之前根据你的视频步骤做了几款面包,效果都很好很成功,松软好吃,可是我最近几次都失败了,好几次我把酵母放进牛奶里,分量都是和以前一样根据你的食谱,我发现过了一阵,酵母奶水完全不起泡,但我还是继续制做面包,所以出来的成品惨不忍睹,不逢松,硬硬的,我找不出原因,是不是酵母收太久了所以失效了,酵母开罐后需要放冰箱吗?谢谢你

您好,感谢您的厚爱和对阿栗一直以来的支持关注! 😘💗🌹🍀 是的,关于咱们面包的酵母保存问题。很多朋友容易忽视。干酵母买来后分装密封(注意一定要密封)后,放冰箱冷冻,用的时候再拿出来,这样能最大限度保存干酵母的活性。以达到长期保存酵母的目的。 一般干酵母买来打开包装后,放置于室温的话,每天都在快速失去活性,一个多月基本就全部失去活性。

Это может зависеть от муки. Из какой пшеницы, как и где хранилась она. Но и от дрожжей тоже зависит. Я дрожжи живые храню в морозилке, а вот сухие (просто не привыкла к ним, хотя удобно)🌹

您好,如果一直回缩是因为面筋松弛不够,您可以尝试密封好后放入冰箱冷藏再次松弛20~30分钟,再来擀开就会容易很多。😘💗

您好,我的沒有加水,純蛋黃比較稠,所以難掃一些,但烤出來表皮很香很酥脆。 也可以蛋黃裡加上一小勺牛奶或者水,這樣會比較好刷,光澤度也很不錯的。😘

how to prevent the buns from opening up during second proofing? mine always opened at the ends even though I pinch them tightly

Hi, it could because the dough isn’t rested enough, as it’s too tight then the dough will kept stretching back, probably rest that longer👍👍❤️❤️🥰🥰
