bruh what this was not even close to authentic. Traditional carbonara is made with guanciale, and doesn't have garlic.

@@lucasdh18 i think that the one tha u made isn't a Carbonara, you need to put on it even the red part of the eggs in a part of 3 red out of 1 white, and for the cheese you never had to put on it cheddar or anything that isn't Parmigiano or Pecorino; for the meat part u can use guanciale or pancetta :) love from Italy

Guga, I'm very critical most times. Though even when I would say to do something different, I always appreciate you. I'm a C.E.C. over 31 years Professionally and have held every title under Chef for 15 years before that. You always say, "I'm no Chef" & I appreciate that. *BUT* a Chef is made over Time & Experience & even MORE importantly a Chef is created by his Adventurousness! No way, that Parmigiano is about £3 to £5 in the UK. Wagu about £40 a kilo, maybe £15 for the tagliatelle with truffle. The only thing I'm not sure of is the truffle.

As an italian I totally love this. It's not some dumbed down recipe exectued throwing random things around and pretending to be an italian recipe. It is well thought, well exectued, and had the quality of the final result in mind all along without pretending to be something it isn't. I will totally try this.

Just watched a Video by the channel, Vincenzo's Plate, where the Chef is a real Roman Chef and he was reacting to 5 videos of people claiming to make Carbonara and yours was one of them. He was so amazed at it that even though it wasn't "Authentic" Carbonara, he said he HAD to try it, he loved the idea of the Wagu fat. So Congrats

I actually ate something similar at Croatian 4 star "restaurant" but without wagyu and expensive cheese. I mean that restaurant has great food all around but that pasta man, that was really something extraordinary. Truffles really give it a unique taste. I can only imagine what the Guga's version tasted like.

You have the italian approval. You did the right passage to cook it,and you put some expensive stuff like tartufo and wagyu meat (as Guga style) which didn't ruin the dish, instead that seems delicious! The only thing you could have done is to eat it quickly the pasta because we don't eat it cold! Congratulations, and welcome to the Italian Olympus.

honestly even though this is a very popular video just because of how fun the reactions are to this dish, the fact that we don't see this type of reaction almost ever in the videos posted by guga either here or on sousvide everything in the past three years is a true testament to how genuine their reactions actually are. if they ever faked anything every video would be just like this one

SO this video inspired me 4 months ago. TODAY IS THE DAY THAT I MAKE IT! Picked up a fat slice of A5 Wagyu yesterday. This morning I actually went to a local truffle farm and uncovered a "extra class" high grade truffle of which I purchased. Also pick up the exact same pasta you are using here along with a fresh block of parm. The only thing I cant mimic unfortunately are your extra chunks of Wagyu fat that you cook in. Regardless, I cant freaking wait.

Dude i'm italian and my mouth is salivating insanely just by watching this. May not be what my NONNAIUSTODU but i'm sure it's amazing. I think cooking the beef on a pan could lead to a better result though, because you could use the rendered wagyu fat as an extra flavour kicker. (not that it's a dish that lacks of flavour by ANY means)

Came here for that, BUT also I don't know anybody who actually likes it with guanciale. Not even the Italians I know (but for the sake of fairness, I have to admit one of them put cream into his Carbonara, so he might not be a reference). It's super fatty. Comes out a little bit like pork rind ... anyway, I don't like it. Everybody I know likes it better with pancetta (also mine from Italy does not look like the one in the video). Might be a generation thing. I got rid of my leftover guanciale at my 60+ neighbor.

@@kmv3040 depends also on the way to cook the guanciale, if you don't go for a low heat for a long time, the fat doesn't melt enough and leaves you with the typical fatty flavor, depends also on the spices of the guanciale. Btw WHO TF PUTS CREAM IN A CARBONARA, lol, the original is pecorino romano, egg, and guanciale, yes using pancetta and parmigiano is acceptable as pecorino aha a very distinct flavor that people may not like, but fuckin cream lol
