Hahaha! As a kid, I hated crusts on bread but as a grownup I actually like it and it helps to hold all the stuff in. Had to trim them off for this though to keep it real😆

Thanks! It's starting to become more widely available outside Japan. If you have a local Japanese supermarket, try looking there. Otherwise there are online retailers that carry it.

Hi Tess, thanks for your nice note! I don't usually include the eating scenes because I usually shoot these out of sequence, but I'll try and add these clips in from time to time! I picked up the beef on sale at a local super market. If you're in the US, there are some online shops that carry it.

For this it's less about the cut and more about the grade. You ideally want to use Japanese wagyu with a Japanese ranking of A5 (other countries have similar sounding rankings, but they are not the same). Assuming you use A5 wagyu most cuts are going to be tender so you could use anything from a sirloin to flat iron to filet. I used sirloin for this.

@@mimicobb9315 It will work, but it won't be the same. When made with A5 you could eat this sandwich without teeth. Aussie beef will likely require some more effort to chew. I'd recommend using a very tender cut like tenderloin, otherwise you'll probably want to eat the sandwich with a fork and knife.

Hi Faisal, there are a few options. 1) lower the oil temperature to 170 C or so, this will allow you to fry it for longer without burning the outside 2) Use a thinner cut of beef which will cook through faster.

@@faisalamir1928 Hi Faisal, I don't want to discourage you, but if this is your first time cooking something you might want to start with something more basic. Deep frying requires a fair amount of skill, and wagyu is such an expensive product it would be a shame if it didn't go well. Chicken katsu uses a similar process and the meat will be much cheaper so you can practice a few times until you have the technique down: kzbin.info/www/bejne/aYXIYoCKf8lkm5Y If you really want to do something with Wagyu, this might be an easier one to tackle: norecipes.com/chaliapin-steak-don/ Since it's pan fried the process goes a little more slowly and it's a little easier to tell when it's done to your liking since you can just cut into it to check. You might also want to consider picking up an instant read digital thermometer which is an easy way to see when meat is done to your liking (google "steak temperature") to see charts of temperatures and doneness.

Hi Andy, I got it at a local supermarket here in Tokyo. The beef is from Kagoshima. Wagyu literally means "Japanese beef" and it generally refers to one of 4 breeds of cattle. The stuff sold at most supermarkets in the US is not actually wagyu as it's produced in the US and the beef usually comes from cattle that have been aggressively crossbred with non-Japanese breeds such as Angus. If you want to get real wagyu you'll need to find a butcher that carries it (usually found in bigger cities), a Japanese supermarket, or try looking online.

Hi Fadhilah, sake has a high concentration of naturally occurring glutamates due to the breakdown of the protein in the rice during fermentation. This is what gives the sauce the taste of umami. If you don't want to use sake, the closest substitute would be to use water and add some MSG (which is a lab synthesized form of glutamate)

😆 My timings never been good. I shot this a few weeks ago before things got this bad and I really debated whether to sit on this for a few more weeks before releasing it. In the end, I decided to put it out to give people a chance to enjoy it vicariously. Will try and do more practical stuff in the coming weeks.

For me, it would be best to do grocery shopping by delivery right now, but they are so overwhelmed with requests that I can't get an appointment! So I am venturing out this morning. What's your opinion on American Wagyu? Obviously the quality will vary by farm. The only Wagyu I've ever had was from a local farmer. He was selling chuck at half price and I just ate it like any other steak, cooked a perfect medium rare via sous vide. It was one of the best steaks I've ever had. I hope that one day I can justify buying an A5 steak from japan.

Hi Edmond, I go into more detail about it in my blog post, but I find that term "American Wagyu" to be very misleading. The first thing is that Wagyu means "Japanese Beef", so it doesn't make much sense to call something made outside of Japan Wagyu. I'd be more okay with it if they were breeding Japanese cattle and raising them using the same techniques as in Japan, but I don't know of any ranches outside of Japan raising full-blood Japanese breeds (such as Japanese Black, Japanese Brown, Japanese Shorthorn, and Japanese Polled). Most are raising crossbred cattle because the Japanese government banned exports of live cattle decades ago. Although the meat from these ranches is often better than the stuff in supermarkets, I don't think the improvement justifies the prices I've seen being asked it. Hopefully you'll have a chance to try the real stuff someday.

A) As much as I don’t usually approve of trendy, unnecessarily expensive takes on fast food, I’m 100% onboard with this video. It looks delicious. B) I’m not sure if you’ve ever been to New York or met a New Yorker, but, if we ever call anything that we a produce a “California __”, that’s just a humble euphemism for the fact that we’ve created something entirely substandard. Otherwise, we’d put our own brand on it. Honestly, the only truly high quality New York product that comes to mind which we’ve attributed to another locale is Philadelphia Cream Cheese. Apparently, back when we invented it, Philly was a cowtown associated with high quality milk.
