Love ma tai go. My mom used to make it with real water chestnuts. I’m lucky that even living in the suburbs of San Francisco there are plenty of dim sum available if I’m inclined. The pandemic has put a damper on getting out. I did have dim sum with a former co-worker because I gave her some Taiwanese grapefruit growing on the tree outside our front door. I thank you so much for your char siu recipe. It’s great that I can make it anytime I have some time off. Plus I can make it just the way I like it, fatty, lol. I always recommend your channel to my friends and family when they want to cook your types of dishes. Keep up the great work Maggie. Spend a lot of time with your children, they grow up too fast.

I miss San Francisco! Japan Town, the banh mi from Little Saigon and the Chinese food were on point when I went! The roads are just a little steep so pushing a stroller with my toddler in it was not fun!

@@rackoflam yes you are right. I used to drive manual transmission cars exclusively. But it was a pain driving one in the city. Clutch in, parking brake on, put it into gear. Slowly ease the clutch out, release the brake and hope you don’t drift back into the car behind you. Nice that we have flatland an hour south of the city. But I drive an automatic anyways. Gotten lazy in my older age. But won’t admit that I’m old yet, lol

My heart is broken....we have no local Asian market for the Water chestnut flour and sticks of brown sugar. Looks delicious though. I'll just have to leave it to my imagination.❤❤❤😊

Hi Maggie! How long did it take for your batter to thicken? As instructed, I whisked continuously and it took at least 30 min for my mixture to thicken. What am I doing wrong? Please help.

It doesnt take long for my batter to thicken. One possibility is your water chestnut flour and water mixture was not blended thoroughly or the measurements were not accurate. Sorry you experienced that! Hope it works out next time!

This is my 2nd time trying. Maybe 3rd times the charm. Haha My water chestnut flour was thoroughly blended and my water was accurate. I measured 300ml. I’ll try again.

I had the same issue too. Tried this recipe twice over the weekend and realized it took about 20 minutes to have the batter thicken while standing over the stove and whisking on low heat with exact measurements. The video didn’t mention the time it takes for batter to thicken, so my bf and I thought we were doing something wrong as I feel the video skipped over this crucial part and no extra instructions were given. Where the video says “when it thickens” that is where the confusion was. Had to replay it a few times, then through trial and error, we gave more time into whisking the batter over low heat, approx. 15-20 mins whisking the watery mixture and eventually it did thickened into a thick paste.

I just made the water chestnut cake (hopefully it turns out). Did you steam it on medium for 30 min?

@@rackoflam Thanks! Not sure what I did wrong, but my water chestnut cake didn't turn out. It didn't set like yours. The batter appeared thick in the pot, but when I poured it into the loaf pan, I didn't have to level it like you did. Should I have let it sit on the stove longer?

Looks quite simple to make but need to get a bag of chestnut powder maybe slightly difficult but nevertheless will try, as new dim sum restaurants almost don't make it. TQ

I linked the water chestnut flour in the description if that helps! I would try to source it since the flour has a unique and distinct taste. I haven’t substituted with anything else, but worth trying almond flour (as per Google). Hope that helps!

Shu mai. When I lived in NJ, I spent a lot of time eating in Chinatown. I also know the Lower East Side. Had a friend on Ludlow St. I also would say Canal St is a funny dividing line, one side lo mein the other side linguine. Have a great day, stay well 🙏.
