I wonder if you refrigerated the dough after being piped, and then fried them. The ridges would probably stay, and the dough wouldn’t fall apart because it’s cold. They looked good 👍

To cut the bag, I usually push the tip as far forward as possible to mark where you need to cut and then push the tip back in order to cut the bag without running into the metal. 😊

Try baking on a baking rack it will allow air to circulate around the churro, and more even cooking. If you have a convection setting using convection bake or an airfryer for less time will also help

Cottage cheese is the popular ingredient nowadays. Usually the excess liquid is drained off and then its blended. I wonder can you get this same results just using cream cheese? Perhaps sour cream with excess whey drained off?

I think if you bake it for less time (just until it sets like 10-12 min) and then pull out and fry maybe you keep the ridges and it will finish cooking....also you know Allulose burns quicker than other sweeteners....I will definitely make this......Julianna NC

I would try the freezing, par-fry, & then do a final fry. I remember they did French fries like that to get a really crispy exterior.

you clicked the wrong thing, heres the recipe, there is no link: Low-Carb Protein Cottage Cheese Churros Servings: 6-8 churros Net Carbs (per serving): ~2g Ingredients: 1 cup almond flour 1/4 cup vanilla whey protein powder 2 tbsp coconut flour 1 tsp xanthan gum 1 tsp baking powder 1/2 cup full-fat cottage cheese (blended smooth) 2 tbsp cream cheese (softened) 2 large eggs 1/2 tsp vanilla extract 2 tbsp powdered allulose 1/2 tsp ground cinnamon 1/4 cup butter (melted, for brushing) For the Coating: 1/4 cup granulated erythritol (I think swerve would be better) 1 tsp cinnamon Instructions Blend the Cottage Cheese: Blend cottage cheese until smooth and creamy, then set aside. Prepare the Dough: In a large mixing bowl, whisk together the almond flour, protein powder, coconut flour, xanthan gum, baking powder, powdered erythritol, and cinnamon. Add the blended cottage cheese, cream cheese, eggs, and vanilla extract. Mix well until a thick dough forms. Shape the Churros: Transfer the dough into a piping bag with a large star tip. Pipe the dough into 4-6-inch strips onto a parchment-lined baking sheet or silicone baking mat. Bake the Churros: Preheat your oven to 350°F (175°C). Bake for 20-25 minutes, or until firm and golden. Optional Frying for Extra Crispiness: Heat a neutral oil like avocado oil or coconut oil to 350°F (175°C). Fry the baked churros for 1-2 minutes until golden brown, then drain on paper towels. Coat the Churros: Melt the butter and brush it over the warm churros. Mix granulated erythritol (or swerve/allulose) and cinnamon in a shallow bowl, then roll each churro in the mixture until evenly coated. Serve: Enjoy warm with sugar-free chocolate sauce, caramel, or whipped cream.

The browning may have to do with your choice of sweetener. Allulose caramelizes well, and unfortunately, it browns faster than other sweetners.

Ladies churros are fried in a vat of hot oil. You needed a couple more inches of it in your pan. I’m making some up to the baked part! You ladies must be stressed- at this point you are arguing rather than your usual banter. 😮

I hear you are hoping to get a studio. In my experience, moving into a studio takes away from the personal touch that your own kitchen provides. Maybe a condo with a room in between for filming could work, but the charm of your tiny kitchen adds something that a studio just does not do. Plus you are going to pay more attention to ingredients and you will be running to the store for forgotten items. I. Think you will lose the charm of your personal space
